Today we r making Traditional Chicken Pulao from scratch with very easy to follow recipe & some trick to make your cooking experience awesome.
INGREDIENTS:-
3 Glasses Rice (2 cups = 1 Glass)
6 1/2 LBS Chicken (Med PCS)
STOCK / YUKHNI :-
5 Glasses Water (2 cups = 1 Glass)
1 TBL SPN Salt
2 Roma Tomatoes
1 TBL SPN Fresh Garlic
1 Large Green Chili
2 Black Cardamom Pods
2 Bay Leaves
1 Cinnamon Stick
1 TBL SPN Coriander
10 cloves
2 TSP Black Zeera
1 Med Onion
6 1/2 LBS Chicken (cut med PCS)
MASALA:-
1 1/2 Cups Oil
2 Med Onions (cut)
1 TSP Salt
1 TSP Red Chili
1 TSP Garam Masala
2 Roma Tomatoes
1 Cup Whipped Yogurt
1/2 bunch cilantro

RECIPE NOTES CHICKEN PULAO YAKHNI 1. 5 glasses of water in big pot. 2. Add chicken. 3. Add onion. 4. Add 2 whole roma tomatoes or 1 regular tomato. 5.2 bay leaves, 2 cinnamon sticks, clove, cardamom, garlic, salt, coriander powder, black zeera, and 1 hari mirch. 6. Now let it heat up. Do not overboil it. 7.ONION PART take 4.5 cups of oil and heat up in a giant degcha. Then add the onions once oil is hot. this takes a while so let it be. 8. go back to the yakhni, have a small taste of the broth. 9. take out the chicken with a slotted spoon into a big bowl. 10. by now onions are nice and brown. add chicken you just removed from the yakhni. 11. add 1 tbsp salt, 1 tbsp garam masala, 1 tsp red chili. 12. stir around with wooden spoon. 13. add 2 chopped roma tomatoes and 1 cup yogurt. Stir. 14. Go back to yakhni pot. Take out all the solid stuff. 15. Now check on the onion/chicken pot. Oil is separated by now. 16. Use a soup ladle to put the yakhni in glasses. Put exactly 4.5 drinking glasses into the onion/chicken pot. 17. Bring liquid to a boil. 18. Add rice and stir. 19. Put it on dam (low temp) 20. when water reduces, stir very gently so rice doesn't break. 21. at 8:36, he put a lid on the stovetop (under the pot??) 22. 8:44 turn off heat, put a towel over the pot, and then a lid over it. 23. 9:32 garnish with chopped cilantro. 24. 9:40 showed step 22 again? KACHUMBER 1 onion 1 tomato 1 cucumber (cut lengthwise in half, then slice) 1 tsp black pepper 1 tsp salt 1/2 a lemon squeezed 1/2 bunch chopped cilantro mix it up with gloved hands. RAITA 1 cup yogurt 1 tsp salt 1 tsp black pepper 1/4 bunch cilantro chopped 1/4 cup milk if you like heat, add 1 green chili. HOW TO PLATE Put the pulao in a plate and garnish with tiny bit of chopped parsley. Put a small bowl of raita and small bowl of kachumber on the sides.

Sam Adris Did you follow it to the tea or did you improvise at any point ? As I know it can get a little tricky with salt as this depends on the rice you use , sometimes you need extra .

Hi loving your recipes. I've made the mutton pulao which was amazing and left me hunting more of your recipes. I have induction hob and I'm sure your dum style and timings are different for both the mutton and chicken dishes, can you explain a fool proof method 👍

That looks beautiful. We make pilau and it never looks like that! I will be trying this way out for sure. Im so happy you guys are on youtube, your videos are great and easy to follow. Just got one question, i was always taught if you have for example, 3 glasses of rice you add 6 glasses of water. I noticed you had 3 glasses of rice and 4 and half of water. Was your rice partly cooked? Thank you again! I watch you all the way from the England!

As far as measurement of water VS rice is for PULAO(3 glasses rice = 5 Glasses water) you have to account for evaporation . My rice went in raw in the stock but the stock to rice ratio is perfect & u see the result. Again thank you so much & ur awesome!!!

Rufi Razzak rice is always washed and soaked, I want to make it clear that has nothing to do with rice to stock ratio. I have very clearly mentioned the measurements so you can get on point results thank you!!!!

hi brother normaly for basmathi rice cooking we will use 1:2 ratio of water or yakni....u hre for 3cups of water u adding 4 1/2 cups water ..how does the rice get cook in that water can u pls explain ..

Awesome recipe bhai! So proud of you!!! Wanted to ask see if you put the whole garam masala/ginger garlic/green chilli (all the chunky ingredients) etc that goes in the yakhni in a muslin cloth and put it in the water would that change the yakhni in any manner? Maybe add a bit more water but the rest is the same? Its just you make it how me and mom do but...the seperating part can be a bit tedious...lol your views? Basically making a potli of ingredients

Sakhawat Hussain this is a great question, I wash my rice 3 times with hand to get all the starch out in room temp water & soak them for at least 30 mins thank you !!!!!

why did you put so much oil , since i am living abroad alone i eat a lot , i think i will eat more than half of this pulao , so about one cup oil per day , can i use less oil

Viral AdDicKtt if you want to use 1 cup then use it, this is exactly what you need to cook 6.5 lbs chicken & 3 glasses of rice it feeds 8 to 10 people recipe. I hope I was able to explain it thank you

Can you please explain the rice to water ratio. I was always told to double (1 rice cup = 2 water cup). So how much water would you use for 1 cup?

Sakhawat Hussain I will give a approximate time 5mins on high & 4 mins on med heat check the rice. It also depends on the kind of pot you have & the stove thank you & ur Awesome!!!!

Baby Luv I took the lid of after the rice is fully cooked, it’s called Dum & I showed the rice in the pot & on the Platter how perfectly they r done.
