Nothing like made-from-scratch food......I grew up in a house where my mom made even bread from scratch every day for a family of 10 God bless her soul. Asia is remote from me but I've become curious about its cuisine. I'm surprised at the amount of oil in the wok but the food doesn't taste oily.

Great work! I guess this is what we call 'Green Onion Oil Noodle'(葱油拌面) in Chinese, make sure the noddles is stirred with the green onion oil & sauce when they are just cooked and hot, you'll love it! If you put the noddles into cold water, they become more chewy and slippery, put fresh vegetables and other sauces, it's super fresh & tasty, just another style.

It turned out so good just like store bought noodles anyone reading this confused whether it'll work or not then I recommend giving it a try!! If you don't have the onion oil mentioned you can use high boiled hot water hope it helps enjoy cooking :))

Hi, I tried the recipe, made a little adjustment in water use, and added oil when rolling noodles and used a pasta machine. The noodles turned out great. I think what he didn't show is that he stretched the noodles. I did that. May be that's why it looks like that.

I followed the ingredients 250g of flour, 80ml water, 3g baking soda and 3gsalt it was so hard to knead and its been 2nd night and I'm still kneading the dough

It's possible that different types of flour absorb water differently. Depending on how the manufacturer makes it, part of it also depends on how old your flour is, if it's too dry you should consider adding more water to it.

because it's a commercial wok stove, and it is easily overheating, without the constant water flow in the sink that stove will buckle under the heat. Water is recyclable and not wasted.
