No. This is more of the way these are preserved. I use them in a lot of my cooking but incorporate them in the beginning -- for example, if I am making beef for burritos then I chop up chipotles and add it to the onion and garlic before adding the meat. I would put the onions anf the garlic in the blender with the ketchup, and I would grind some pepper in instead of whole peppercorns

Actually, the jalapenos that get selected for smoking are the ones that have turned deep red and are practically dry. I bought these at the store in the US. Thanks for watching!

Honestly, I never dried my own chilies. I always purchase them like that. I have read that you can dry them in a very low oven or in the sun but I don't know how. Sorry! Thanks for watching the video!

@@Thefrugalchef I dried them in a dehydrator. Took about 12 hours, I crumbled them up and removed the seeds. Thinking I’m going to make chipotle powder with this batch and Adobo with the next. Thanks for responding!

I made these 3 years ago. Processed them in the pressure canner and used them when needed. Now I'm making another, bigger batch. Thank you. Here in Australia this is the best way for me to get this wonderful, tasty ingredient.

terryc47 You want the chipotles to be whole inside the sauce but you also want to flavor the sauce. This is why I only used a few of them to bland with the tomato. Thank you for watching! I hope this works out for you.

is it absolutely necessary to use jalapenos? i have about 10 lbs of las cruces which are similar in size and heat to jalapeno. i'll smoke them myself. your thoughts?
