I just made my first Chocolate Macarons, with you tips and detailed instructions, was spot on. They turned out great. I am going to fill some of the with vanilla ice cream with a few crush up macrons and sone withe the chocolate Ganache. My husband and son loved them. Thanks for the confidence you give us.

C&H brand sugar makes caster sugar. It is labeled Baker (or Baker's) Sugar. It is sold in a container that looks like a milk carton.

Adjustments with macarons are risky, if you have a good handle on pulling them off as written you can try experimenting but because they’re so finicky I can’t say for sure they will turn out.

Ooh that’s tough, I’m sorry but I don’t have a substitute that I am confident enough to recommend as I haven’t tried. I do know that some people have used all purpose flour, but I am not sure exactly how they substitute. I’m sorry! Maybe someone here has tried it and can chime in with a recommendation.

There are recipes with all purpose flour. I believe there are even ones for gluten free. Just look around KZbin or the internet.

You run the risk of over-mixing the batter and not having it properly incorporated.

I recommend that with my classic French macaron recipe but it’s not necessary with this one. Of course you could refrigerate them and they’ll still be delicious after 24 hours!☺️

Just a warning the ganache is superrr runny if you follow the linked recipe. Not suitable for filling a macaron at all. You'll want a ratio of at least twice as much chocolate to cream for a thick ganache whereas this recipe is one to one. Too runny.
