Same here, I'd personally use a whisk that's similar in size with the small pans. I think Babish's tiny whisks are adequate.

I never like too creamy or too rich, I always like nutty crisp crunchy edges of chocolate with gritty creams. Just makes sense. I think this'll be a good food at some point I make in the future.
