今日は、スイートチョコとホワイトチョコを使って
濃厚なチョコレートムースを作りました^^
最近youtubeでとっても流行っている
ダルゴナコーヒーをケーキと一緒にいただきました。
(ちょっと泡だて過ぎちゃったかな?笑 美味しかったです^^)
▷Ingredients(φ15cm round mold):
■Cocoa sponge
2 eggs
60g sugar
50g cake flour
10g cocoa powder
20g milk
20g oil
■Chocolate mousse
2 egg yolks
30g sugar
180g milk
3g sheet gelatin
80g couverture sweet chocolate
80g couverture white chocolate
170g heavy cream
10g sugar
■Glacage chocolat
2g sheet gelatin
45g sugar
13g cocoa powder
40g water
30g heavy cream
20g couverture sweet chocolate
▷材料(φ15cm 丸型1台分):
■ココアスポンジケーキ
全卵 2個
砂糖 60g
薄力粉 50g
ココアパウダー 10g
牛乳 20g
米油 20g
■チョコレートムース
卵黄 2個
砂糖 30g
牛乳 180g
板ゼラチン 3g
クーベルチュールスイートチョコレート 80g
クーベルチュールホワイトチョコレート 80g
生クリーム 170g
グラニュー糖 10g
■グラサージュ・ショコラ
板ゼラチン 2g
砂糖 45g
ココアパウダー 13g
水 40g
生クリーム 30g
クーベルチュールスイートチョコレート 20g
▷作り方:
1.ココアスポンジを作る。全卵2個、砂糖60gをボウルに入れて混ぜる。湯煎に当てて35~40℃程度に温める。湯煎から外してハンドミキサーで白っぽくなるまで泡立てる。
2.薄力粉50g、ココアパウダー10gをふるって加え、むらなく混ぜる。
3.牛乳20g、米油20gに②の生地をひとすくい入れて混ぜ、②に戻して混ぜる。
4.15cmの型に紙を敷き、生地を入れて大きい気泡を叩いてなくす。170℃に予熱したオーブンで25~30分焼く。
5.しっかり冷まし、1cmの厚さにスライスする。
6.チョコレートムースを作る。板ゼラチン3gを冷たい水でふやかしておく。
7.クーベルチュールホワイトチョコレート(スイートチョコも)は大きければ刻んでおく。
8.卵黄2個に砂糖30gを加えて白っぽくなるまでよく混ぜ、牛乳180gを加えて混ぜる。
9.鍋に移して弱〜中火でとろみが付くまで混ぜながら火を通し、アングレーズソースを作る(目安は82℃)。ふやかした板ゼラチン(⑥)の水気を切って加え、混ぜて溶かす。
10.クーベルチュールスイートチョコレート80g、クーベルチュールホワイトチョコレート80gにアングレーズソースをそれぞれ120g加え、チョコを溶かす。
11.生クリーム170gに砂糖10gを加えてゆるく泡だて、90gづつ加えて混ぜる。
12.型にスポンジを敷き、スイートチョコのムースを流す。ラップをして冷凍庫で1時間冷やす。
13.ムースの表面が固まったら更にスポンジを敷き、ホワイトチョコのムースを流して冷凍庫で5時間冷やす。
14.グラサージュ・ショコラを作る。板ゼラチン2gを冷たい水につけてふやかしておく。
15.鍋にココアパウダー13g、砂糖45gを入れて混ぜ、生クリーム30g、水40gを入れて混ぜる。
16.中火にかけて沸騰したら火からおろし、板ゼラチン2g(⑭)を加えて溶かす。
17.⑯を濾しながらクーベルチュールスイートチョコレート20gに加え、混ぜて溶かす。
18.ムースを型から外し、グラサージュ・ショコラを回しかける。お好みでいちごを飾る。
冷蔵庫で解凍してから食べてもよし、少し凍ったままアイス風に食べても美味しいです。

フードプロセッサー:BRUNO(ブルーノ)
6個取りマフィン型
繰り返し使えるオーブンシート

持ち手が木のふるい
クーベルチュールチョコレート:大東カカオのスイートチョコレート
450gの発酵無塩バター(明治、よつ葉、カルピス、高千穂、森永など)
その他製菓材料
▽Cotta (通販専門)
450gの無塩バター(よつ葉、高千穂、明治、森永など)
クーベルチュールチョコレート:カカオバリー、バンホーテン
その他製菓材料
繰り返し使えるオーブンシート

よく頂く質問などについて。
Q.バターは無塩ですか?有塩ですか?
お菓子には基本的に無塩バターのみ使用しています。
無塩バターに塩を加えるレシピは有塩バターではだめなのか?と質問をいただくのですが、狙った塩加減にしたいため無塩バターを使っています。
※一部過去の動画は「バター」のみの記載になってしまっています。
今後は字幕に「無塩バター」と表記するよう心がけますが、
それ以前の字幕に「バター」としか書かれていなくても
「無塩バター」を使用しています。
Q.オーブンは予熱しますか?
焼成温度に合わせて予熱しています。
家庭用オーブンは庫内が小さく扉を開けた時に熱が逃げやすいため、
焼成温度+10〜20℃で予熱し、焼くものを入れてから焼成温度に合わせて焼いています。
こちらも今後は字幕で「〇〇℃に予熱したオーブンで□□分焼く」といった形で表記するように心がけます。
Q.倍量で作りたいのですが。
12cm丸型を15cm丸型に→1.5倍
12cm丸型を18cm丸型に→2.2倍
12cm丸型を21cm丸型に→3倍
15cm丸型を12cm丸型に→0.6倍
15cm丸型を18cm丸型に→1.5倍
15cm丸型を21cm丸型に→2倍
12cm(4.7inch)→15cm(6inch) =×1.5
12cm(4.7inch)→18cm(7inch) =×2.2
12cm(4.7inch)→21cm(8.2inch)=×3
15cm(6inch)→12cm(4.7inch) =×0.6

Today is yalda night the longest night in our timeline in iran and It’s a traditional ceremony for all iranians over the world and I made this cake for third time and I can imagine how my family will like it and I appreciate you in my heart 💜

I've seen the frothy coffee a few times already with some very talented cooks and video editors, but nothing beats the Hidamari Style. I also noticed the spatula color choices for each chocolate! Red and white for darker chocolate and black for white chocolate. Your videos are just very pleasing to watch...

When I saw the instant coffee, I thought: "Nooooo!" But then I was really surprised that you could make froth/cream just using sugar, water and instant coffee. I may sound dumb but I didn't know you could do that!

サムネ見て飛んできました!!シンプルな見た目ですごく美味しそうなチョコケーキ!!普通のスポンジケーキは作ったことあるけどココアのは作ったことないので挑戦して見ます!スポンジケーキはフワフワしててすごく美味しいんですよね〜手作り最高!!ひだまりさんのお菓子を一度でいいから食べて見たいですねー

In Brazil almost 100% of desserts recipes we use condensed milk which gives an awesome flavor. It's also hard to see a recipe with gelatin. Different cultures. Yours look perfect too.

Hi sorry to bother, but when you make the first layer of chocolate (the one who needs to rest 1 hour in the freezer - 9:31 in the video) how about the white chocolate layer? Doesn't it solidify too in one hour? I'd like to make this cake but I can't understand that step 🤔

If I wanted to make this in a 9in pan would I double, triple, etc the recipe? Actually it's not about wanting to. I *need* to because I don't have that pan size. As for the gelatin. Can I use the powder form? Again, I don't have the sheets. Can you please answer my questions? I don't watch these videos just to view. I want to make what you're putting out but that's hard to do if I have questions yet they don't get answered. Thanks!

Of course you could substitute gelatin sheets with powder! I think you only need to dissolve them in a bowl of milk then add it into the mousse mixture :)

You'd have to do some math. I can give you an example. The person in the video uses a 15cm pan also known as a 6in mold. You want to use a 9in mold for this recipe. Ex: 6in mold -30g of sugar 9in mold - x amount of sugar You would cross multiply the 30 and 9 to get 270 then cross multiply the 6 and x which would leave you 6x = 270 You would then divide both sides by 6 to have the variable be by itself. 270 ÷ 6 = 45 You would need 45g of sugar. If you follow this rule you can find the measurements you need.

@@renr4853 that would be true if our pan was a straight line. Since our pan is a cylinder we have to calculate with volumes. Lets assume your pan Is 9 inches in diameter The one in the video 6 in in diameter And both your pan and the pan in the video are 4 inches high That makes the volume of the pan in the video 3^2*π*4~ 113 in^3 And your pan 4.5^2*π*4~ 255 in^3 And now you calculate 113 = 30 g 1 = 0.265 g 255 = 68 g That would mean that youd need about 68 g of gelatine and the ratio is about 2.26. so take all of the videos measurements and multiply by 2.26
