I want to share something with you young lady. I have an uncle who lives in Dallas Texas, and in Arizona part time next to my mother. He and I share a passion for great food, mexican food being one of our favorites (Korean is a favorite of my son and I btw). He loves chorizo but had never thought of making it himself. Six month ago, I made your recipe and make chorizo and egg burros for my family. He loved it so much, I shared your video with him, and now he is making it himself. So, in a small way, you changed the life of a man almost 70 years old. Thank you for that!!

Hi! I’m from Peru and I make a super similar mix but instead I use my Peruvian panca pepper” which look a little bit similar to your guajillo or árbol color pepper but now that I live in Texas I couldn’t get my pepper so your recipe has saved me to make some home made chorizo or sometimes I call it salchicha casera. So, whenever I've read the label on a package of chorizo at a Mexican grocery store, the first three ingredients have always been: pig cheeks, lymph nodes and salivary glands. That's fine; I already learned to love chorizo before I knew what was in it. But why, whenever you see a recipe for chorizo online, does it never include those three ingredients but just - generically - pork? Can someone please 'splain to me?

Glad you mentioned low-fat ground pork. My memories of pork or beef chorizo is of an oily red liquid oozing from the tortillas and staining my fingers and the kitchen table! I could have soaked it up with two napkins. Thank you for your wonderful presentation, which was clear, organized and professionally done. One thing I especially appreciate is how you don`t make yourself the center of attention by being loud and snarky, but rather you simply present your recipe.

I made this several weeks ago using a mix of ground turkey and 80%/20% ground chuck - - I tried to do it from memory, not reading your recipe step-by-step, and it turned out great, only I didn't add enough red chile - so it tasted more like spicy sausage than chorizo. So I am trying again today, but following your recipe more carefully. Many thanks for this! UPDATE: I made this again after printing out your recipe to follow it more closely, and it turned out great. I even gave some to my best friend because I thought it turned out so well, and she liked it because it has less fat than the store-bought chorizo. I am allergic to pork, so this recipe is a godsend to me. Thank you, thank you, thank you!

Every 6 months or so, my family all works together to make about 15 pounds of chorizo all from scratch. We have been doing this for a few years now since we couldn’t find a brand that we truly liked. We use your recipe and multiply it into batches of a few pounds each, then freeze them into .75 or 1 pound packages. I love our “chorizo making day” and it’s so nice to have it available all year long! A really great recipe that we all love!

Love learning how to make my own, at present, I use the premade spice mix, but love that I now have a homemade recipe. Growing up in Az, ate this a lot, but living in Ms, now, there's no good chorizo to be found and the store bought stuff just doesn't taste right. So again, thank you for this recipe.

Tried this recipe tonight. I made the recipe exactly as you did, except that I ground my own pork shoulder. The first pound I made had great flavor, but I like it a little hotter. I made a second batch and added 3/4 teaspoon red pepper flakes. The heat on the second batch is perfect, but I'll run the pepper flakes through a coffee grinder next time. I also split the paprika on the second batch between fancy paprika and smoked paprika, using the total amount you specified. Thanks for this recipe. It's definitely a keeper and one I'll use many times...

Thank you again for another great recipe!! I followed your recipe to the letter, but surprisingly, I couldn't find guajillo chiles ANYWHERE here - go figure, lol. They had to be special ordered - which I did 😁😁😁. And I'm glad I did because my chorizo turned out fantastic!! I mixed the ingredients to freeze, but I had to sample some before freezing. I must say that it tasted way better than store-bought!! The ONLY downside was that my Oster blender has a white rubber lid, so after blending the chiles, the color stained the lid.😕😕😕 I tried a few tricks to rid the stain, but it seems to be permanent. I don't care, lol...it's a very small price to pay for the deliciousness that is this chorizo!! In the future, I'm going to experiment with different chiles just to see what different flavors they bring. Again, thank you so much, and I look forward to trying more of your recipes!! 🤗🤗🤗 Sidenote edit: I found some guajillo chiles locally AFTER this post, lol. The husband loved the chorizo (and eggs) in his breakfast burrito for the 'at work breakfast' I make and pack in his lunchbox. I'm definitely going to try your homemade tortillas, cause they look delicious!! Lastly, I was able to remove the chile stain!!😉😉😉

The best mexican restaurant in my small town used to have Tacos De Chorizo on the menu. They served them with the chorizo and diced potatoes in the tortillas with pico and a sauce or salsa on the side that had a lot of seeds in it and it was pretty spicy. They were awesome! The sauce /salsa was awesome! Then they took them off the menu and I haven't had them in years until today. I followed your recipe and it's awesome too!! These are the best tacos I've ever made at home using your chorizo recipe. My wife loves them too. Thank you! I just wish I knew what sauce or salsa that was lol.

LOVE it! Clear and professional, with a touch of nice Latin background music. I NEVER want to buy store-bought chorizo again! I did add just a few chiles árbol to the guajillos for some added spice and it was perfect! Not too spicy at all. Although it puréed well, I would like to try and strain some of the small skin pieces though. Other than that it was excellent!! Thank you SO MUCH!

I've made this numerous times. I start with a whole pork roast and grind it. I follow all the directions on the recipe. Sometimes I add fresh poblano peppers to the mixture. Since it makes so much with all this meat, I use a piece of saran wrap and put the sausage on there. Roll it up, making a 1 1/2" thick roll. Put the rolls in freezer bags. You are so right, this delicious chorizo does not last long in our house. Excellent leaner kind of chorizo.

Just made this and had to try a little before refrigerating. Delicious! I made a double batch and for half of the chili's, I used guajillos and the other half were hot hatch chili's, and I threw in 1 chili de arbol. Very good. I think this will be my new chorizo recipe, thank you!

Girl I wanted to make something special for my husband’s birthday that is February 25. For dinner I making him chicken mole which I do every year for him since his mother passed away five years ago she would make it for his birthday and so I make it for him now. I recently had a vertical sleeve gastrectomy to lose weight I was 236 pounds I had surgery October 9, 2018 and as of this morning I am down to 127 pounds. I found this recipe from your link in chorizo con papas vlog. I'm so happy you have this. I can't eat the store bought chorizo. I got seriously sick from it once. I don't know if it was bad or I ate to much of it. But tasting for the second time did it for me. I bought some down the road and I had that gag reflex so I couldn't eat it. I love chorizo. My brother had some at his friends house and raved about it. I tried to get the recipe, but he wouldn’t give it to me. Imagine my embarrassment when I found out you could buy it at the grocery store. Years later, after I got divorced my roommate made it for me. From that moment on it’s been a favorite! I literally just made chorizo con papas y huevos for breakfast today. Why didn't I see your video first??? Sure, store bought is great and all but knowing where my ingredients come from and being able to chose how much fat is in it is WAY better!! And, yours looks heavenly!!!
