I actually tried this recipe this last Christmas. I've never eaten a Christmas pudding before (I'm not from England and we don't have this tradition over here) but it was delicious and the guests loved it. I'd definitely do it again.

Top tip: My grandfather makes them four years in advance and feeds them brandy on the first of each month. He doesn't get his eyebrows back until March, but it is 10/10 worth it. :)

@@RachelDavis705 I made this last night. I feel like it would be better with 20g of ginger because it was kinda pungent, and I love ginger. Also I will be food processing the fruit next year, because I feel like the rough chop is a bit too chunky. Otherwise I am of the opinion that the flavors mellowed and blended better after sitting overnight than when it was just off the heat, and I definitely recommend making a creme anglaise to further balance the sweetness and relative acidity. It's a fruitcake and as such it's aggressively Christmas flavored, and one I think I could look forward to once a year. 😀

My Grandma has an Aga and so whenever we make them in about september, it goes in the aga overnight and what comes out is the most amazing rich, treacle-black pudding you ever could get - recipe is a good housekeeping one from the 1950s

Wow! My British bloodline side of the family made this every year, but it was called "fruitcake" & served without the cream, & addition to the mix of finely chopped pecans (grown locally) & as they were strict Protestanrs on that side (Methodists) sadly there was no alcohol burn. 🥰thank you for sharing this, @JamieOliver. I have always wondered where she got her recipe. She also put in spices, cinnamon, allspice, nutmeg & vanilla bean. (She took that recipe to her grave! lol We had ingredients but she would not reveal amounts.) I was told when I was younger that my fruitcakes tasted most like hers. She wrapped in foil after topping with apple slices to prevent drying, & kept them in the root cellar so we enjoyed it until spring. What a wonderful memory this evoked. Thank you again for sharing. I have already passed my recipes on to my children, & as grandchildren as they grow older.

Love a nice bit of Christmas pud! got to be with custard or brandy sauce. Even when i'm bursting at the seams, there's always a little room for it. Makes a good ice cream too if you have leftovers (leftover Christmas pudding said no one ever)

The real christmas pudding dates back centuries....no fresh fruit around in winter....dried fruits available and pricey....soaked in brandy and mixed in a pudd...steamed for hours..added spices to warm the heart....topped with brandy sauce served warm not hot....rich soft and really yummy...also silver coins added for the kids to find....very filling and hearty pudding....but this is a derivative of the previously popular fig pudd or plum pudd......as the ingredients became more expensive sulranas and raisins were substitued....candid peel..dried cherries too..ground almonds...whatever you could get your hands on.....now people buy the supermarket ones....not the same by a long way....the real ones are made in october and stored.to mature ready for christmas day...

@@valoric4767 hi yes a basic white sauce.....with alcohol....sugar not needed too much as the alcohol gives all the flavour....personally l have dark rum...its a richer rounded taste...

Lovely pudding- in Ireland we add booze of course- pre-soak the dried fruit with it overnight. Would that work or would I have to add in more dry ingredients? 🥃🎄
