I used to work in a wonderful bakery, and every morning, my job would be to set up all the ciabatta dough in to strips to be cut by the day baker. After that all I made was viennoiserie, but I've been looking for a recipe where the dough flows like it used to in that bakery. When you transferred your dough to the table, I knew I found the recipe I've been looking for. Grazie.

I've been watching a lot of bread making videos in lockdown and having no success at all, until I tried this recipe. I had to double the rising time because it has been a bit cold here, but the bread came out perfectly. I made 8 rolls instead of loaves and they were so soft and so flavourful with a wonderfully crispy crust. A million times better than shop-bought! Thank you so much for posting your recipes for us to enjoy :)

@@Spectacular-cuoredicioccolato when you say cook bread for 230°C for 8 min, and then 200°C for 15 min, do you take the bread out while the oven cools down, or leave it in?

Thought the same .. all other recipes asks for 20 hours !! So was surprised at this ... I usually make my bread this way but never have the bubbles in it.. so I'm sceptical

This way you get okay Ciabatta. With 20 hours fermentation you get very tasty Ciabatta. There is absolute zero more work, just better planning.

agreed - never baked a loaf of bread in my life and this recipe was so easy to follow. Used crappy old plain flour and still came out like a professional baker had made it. The recipe is the real deal.

Made your ciabatta recipe several times now, my family loves it. I use only half tsp dry yeast per the recipe in your video, seems to be enough for nice fluffy bread. I am making some today again, but I don’t wear a necktie like you, that’s next!

I just baked this recipe using King Arthur bread flour, water at about 95 degrees F, 7 grams yeast 1teaspoon sugar and 2 teaspoons salt. Followed video instructions using convection omen at 230C for 10 minutes then 200 C for 15. Also had pan of water in oven and sprayed oven and bread when putting the loafs in. Turned out fantastic and far better and easier than some other KZbin recipes I tried. This will be my go to recipe.

Among all the ciabatta recipes i’ve seen i thought this one was the easiest to follow. I made this bread yesterday and everyone loved it, the only problem was i should have made more! Thank you for the simple, yet delicious recipes! I feel like a professional baker now 😄

ali nejad I’d say it was crunchy, but i was waiting for the bread to get the brown colour. Nevertheless, it tasted as a real ciabatta! Stay safe and happy as well!

ali nejad trying lowering the temperature to 350 and cook it like that. Or when its done and cooled. Place it in a zip lock bag for a day. That should soften it up.. sounds like your looking for a pita dough recipe. Not italian bread.

Hey, this works great ! I used a full sachet of yeast (7g) , and made 2 larger loaves (so gave them an extra 5 minutes at 200 degrees). Today I added 30g olive oil and increased the 200 degree cook time by another 5 minutes. Even better taste and texture! I hope to do this every day, although bread making ingredients are getting very hard to obtain.

Hi. I just followed Cuoredicioccolato’s recipe. If you check all the comments there seems to be some (=a lot of) confusion about the exact amount of yeast to use. I used a whole sachet on the basis that too much is better than too little, and it worked spot-on. Adding extra oil doesn’t seem to need extra flour, as adding water would.

There is more than 1/2 tsp in this recipe.. watch as he sprinklesit into the water at beginning. Typically pkgs of yeast hold btween 2 and 2 1/4 tsps yeast

I just want to let you know I’ve been making this every day. Thanks to your instructions on the yeast replacement with my starter. I prepare at night before I go to bed then wake up and bake. My oven is off so I bake 500F for 10 then 450 for 20-30 depending on the loaf size. It’s the best. Everyone that asks for the recipe I just send them to your video. Grazie absolutely the best!

I find that baking recipes after 2020 became so afing complicated, everyone just trying to add there special thing: folds, fridge, tools, dance and god know what. its just BREAD! Keep it simple, like this guy, no tools, no molds, no 6 day prep or some exotic ingredients. Thank you.

I would like to thank you personally because I tried this recipe today and not only it turned out fabulous but it was so simple and the taste ... oh my God!!! I think I could never ever eat a bread from the supermarket again! My most favorite type of bread in the whole world is ciabatta and I buy such all the time but today I couldn’t and decided to try making it myself at home for the first time in my life. I watched so many other videos with recipes but yours got me at once because I wanted an original italian recipe and your technique is geniusly simple - no kneading and no turning every 30mins. And that shaping technique with the silicone mat - absolutely genius!!! I was eager to keep the air pockets all the time because I love them but the final result with the taste was the fact that I didn’t expect - heavenly bliss! Couldn’t stop eating! My family too! I will make this every day from now on! Thank you for the great clear, short and straight to the point video with instructions! I have a useful tip for people who have problem with the long proofing time of the dough - I manage to speed it up in few different ways. I either put the dough on a warm surface (not hot) - a heater or something, or I put it upon a bowl full of hot water, the steam helps a lot. I even have a third option - I cover the dough well with a foil and kitchen towel and put it in the oven for about 20-30mins on 50-60 degrees Celsius. It rises so quickly! No need to wait for the favorite bread to get ready now! :) Happy new year and thanks again! Warm regards from Bulgaria ...

@@Spectacular-cuoredicioccolato My pleasure! :) And I have an idea - would you consider placing some useful tips, like few words for the things you think would help people watching the video, in the pinned recipe because you have to search in the comments for the answers of some questions that arise frequently otherwise? Like about the temperature of the water, the yeast quantity, type of flour, dough proofing time and lack of silicone mat? And maybe correct the confusion with the yeast quantity by leaving only 7gr instead of tbsp measurement because I can see in the comments that many have problem with that?

Air fryer conversion + metric measurements (+ smaller version so the dough can fit in, well, most of them anyway) Flour 300g (Cuoco or Strong) Water 230ml Instant Yeast 2g Sugar 2g Salt 6g 200'C for 25~30 minutes (25min a bit softer, 30min a bit more browning with harder outer shell) (if you crank up the temperature higher, use the original temp settings) Thank you for the great recipe as always.

There is nothing that compares to homemade bread. You can also put fresh chopped herbs, or olives in your bread. One good thing to serve with bread like that is extra virgin olive oil and balsamic vinegar. Thanks for the great video. Cheers!✌

Please be aware that 7 grams of dry yeast does not equal 1/2 teaspoon. It is equivalent to 2-21/4 teaspoons by volume, or 1 packet. Rise time will be about 15 hours with only 1/2 teaspoon.

I think you in Italy have very protein rich flour that is necessary to have big bubbles to keep up on not fall together, resulting in a compact bread. So as an example, in Sweden I’d need to buy Special flour.

Hot pan, olive oil/butter on thin slice of bread, and toast a little in the pan. then sea salt. Can be slightly rub with garlic. Love it!

Thank you very much for sharing this simple yet wonderful recipe. I made it this morning (Easter Sunday). The air pockets, ciabbata bread is so famous for, turned out really well. One of them, as my husband commented, even looked like a love heart. My children were ecstatic when they were eating the bread using the adjectives amazing, divine, mouth watering to describe it!!!

What a satisfying experience to see two homemade loaves sitting on the counter. Why are we buying bread? This is so easy, cheaper, and healthier. Made this today, used 2 layers of cling film instead of the rubber mat to shape the dough, came out nice, but no air pockets-much like ordinary bread. Try again.

Hi Il Cuore, I have found out that the water amount is different as per flour. Living in Australia I used 450ml to match your consistency. I did put in sundried tomatoes and olives to another ciabatta and bit more salt and it was marvellous or as you say at the tasting: spettacollare. i also do your Pancetta and it is fantastic. Ordered sausage casing and would try your Caciattorini soon. Mate, I have started course on Italian just to understand more the recipes. If I can make one wish to complete your magnificent recipes pls,: throw in A SMILE

This is the best ciabatta video! I've been watching 10-20 other fake ciabatta videos and clearly this is the winner. I judged based on the final result texture and sound how it cuts and breaks. I baked afterwards using this recipe. And then baked 7 more times. Fantastic! I tried with sun-dried tomatoes - that works better for focaccia not for ciabatta. But with kalamata black olives it's fantastic!

I have to say that this bread is so easy to make and tastes spectacular. I made one large loaf, it took about 10 minutes at 230c and then 25 minutes at 200c. Also one teaspoon of yeast isn’t really enough, with one teaspoon it took nearly 4 hours to rise and then it wasn’t really what I would call an airy loaf. It was nice and all but could have done with bigger air pockets, next time I will use 2 tsp of yeast and see how that goes. Thank you for this recipe.
