I have made this recipe and this is another home run. It's easy to make and most of the ingredients are staples that you already have at home. That pork was even better the next day with a side of scrambled eggs. And those pickled onions, they go with everything. I was even eating them straight out of the bowl.

My sister once gifted me with some dried oregano buds that had been handpicked by her Greek coworker when she made a trip home. And let me just say: wow!

With the internet or in Mexican market - annato is easy to find. I’d like to see that ingredient used.

Well, if you have, then put it in. She clearly said they were only using tomato and bay because annatto is HTF in some places. If you have it, yes, obviously you should use it. It adds more color than flavor anyway though

I actually do have easy access to annatto here in SoCal markets. What recipe changes would I make if I use it, and how much would I need for a batch this size?

They tell you at 1:53. They’re using tomato paste instead of anatto, so tomato paste obviously! 🤦‍♂️

I use a lot -- about 4 tablespoons, ground into powder -- add it to the oil when you add the oregano, and skip the tomato, and reduce to 2 bay leaves. Otherwise if there is a Mexican market near you, they will have 'achiote' - a small package of anetto seeds ground into a paste (just ask for it, they'll have it).

I made it last Sunday. Better the next day. I took a few tacos to work and got rave reviews . I used Mission Street Tacos flour tortillas. Get the grocery store to cube the meat for ya 😉

I would like to make that dish and see how it turns out for me. I spent two years in Thailand during the Vietnam War and ate food there and in other Asian countries, but never spent much time in Mexico.

I have no idea what I did wrong. I cooked the pork at 300 degrees for 2 hours and it came out super tough. I took a few bites and threw the rest away.

That’s happened to me with a Chile Verde recipe. The pork chunks that I thought would be tender after baking them for a couple hours were dry and tough… Try braising them then throwing it in a crock pot with the sauce.

I would also put in some sour cream to dull the heat (and because I love sour cream and will invent needs to put it on food) and top with cilantro to go with the fruity flavor (and because I love cilantro and will invent needs to put it on food)...

Pibil needs annatto, this and the banana leaves lend the distinct flavor that defines cochinita pibil. It's not hard to find either one.

They made it work and adjusted some of the ingredients so it’d be easy for viewers to make, but other than that it was pretty authentic. It’s not like Rachael Ray adding tortilla chips, cheddar cheese and olives to a Mexican recipe.

even if you don't have pib and banana leaves, you can make the most original and natural recipe. there are many ingredients that you can buy in the US. This recipe is a far cry from the original.

I don't know if it's a hypercorrection thing or just a case of people tending to repeat what they hear others saying, but I wish people who know better would politely correct people who do that, because it really can be annoying. Or añoying.

@@josephineroe8424 My guess: It's probably on analogy from 'jalapeño', which does have the ñ, but which I hear pronounced as 'jalapeno' a lot in English, so you can't win.

Ok... first of all, you can get Goya seasoning with Annato literally anywhere. Tomato paste is weird. Second of all, they need to google the definition of a braise because it’s literally defined by browning meat before doing a slow sealed cook.
