Cabbage rolls are my absolutely most favorite food!!! I have loved them since I was about 4 years old!! I am now 76 and that has not changed!! I learned from my mother who learned from a older German woman who ran a restaurant in Valhalla NY back in the 1940s. Just made them for New Year's!! Our recipe steams the cabbage to loosen and tenderize it. The filling is ground beef, cooked rice( that may be my idea as sometimes the raw rice did not cook completely), salt, pepper, paprika and a little oregano. The sauce is tomato sauce or tomato puree watered down with salt, pepper and paprika. Once the rolls are in the sauce they are topped with sauerkraut and caraway seeds. I do them on the stove in a huge pot as I cook them for the whole family!! I have thought of doing them in a roaster in the oven. But maybe will try the slow cooker next time!! I am ready to make more now!!

Another way, and a perhaps easier way to remove the cabbage leaves, is to remove the core and place the entire head in a pot of boiling water for a few minutes. Take it out, remove the outter leaves as far as you can and place the cabbage back in the water to loosen and soften additional leaves, etc.
@lynnnelson668918 күн бұрын
That is the perfect way - no tearing. Then trim the leaves to same circumference so the rolls are the same size. Make them small not humungous.

A very popular Arab recipe, done differently in every region. In Palestine we make it with rice, spices (7 spice mix, dried mint, ground cumin ..etc) uncooked rice, a mix of lamb and beef (ground), we put the rolls in a huge pot, put whole garlic cloves (lots), the juice of one lemon (or two or three!) and more cumin. Cook it on low heat for one hour and a half. A true comfort meal that is highly filling and nutritious.

I think your instinct to add minced garlic was a very good one, that’s what I plan to do. And of course, I *must* have potatoes with my cabbage rolls… just boiled is perfectly fine. I may just have to try and make these, I have always been intimidated by that cabbage leaves prep step… but you made it look pretty doable. I’m thinking Vegeta instead of just plain old msg… it has other seasonings in it that taste very old-school European to me. Maybe some dried marjoram too 🤔. Thanks for this video!🧡

Looks good. My Ukrainian grandmother (Baba) she made them meatless with just cooked rice and some salt, rolled them small, like barely 2 inches, then just baked them plain with a bit of oil and water to keep them from drying out. Then my mom, my Babas daughter, adopted the recipe but added some cooked bacon cut into small bits with chopped cooked onion, and added some finely shredded carrots, not a lot, to the cooked rice, rolled them small as well, then baked them in tomato soup. Now I make a version of my Babas and my moms just to honour them as they are now both passed on. The only thing different that I do is that I use sticky rice, they used long grain. I find it so much easier to roll them with sticky rice. I don’t make the hamburger kind because I was told traditional is usually meatless from the region of Ukraine my Baba was from and that is just how I do it now too, with the exception of bacon. I don’t mind them with hamburger, but I just eat other people’s this way. I guess every region had their own way of making them. Also my Baba and my mom boiled the whole head of cabbage to separate the leaves as do I. It’s just sooo much easier.

My grandma's recipe is almost identical to this but I usually make a weeknight cheater version 😂 I make the ground beef with onions and garlic in a pan, paper towel some of the grease out, then add the rice, tomato soup and a bag of shredded coleslaw. Cook for a few minutes until the cabbage is starting to soften, done in about 30 minutes. Plus the cabbage still has a little crunch to it, it's so good that way. Not 100% grandmas but it's great on a weeknight and even better the next day

Few differences wish my Polish recipe: we boil the whole cabbage to separate leaves, so you don’t have to cut them, raw rice not cooked and pork, never beef 😅 and it has to be boiled longer for cabbage to be more tomato infused. My Polish grandma used the tomato soup too. I think that in the 70s when convenience foods became more popular she started to take short cuts.
