I summed up the recipe above if anyone needs it :) Recipe: Makes 10 buns - Bread: 110ml water 7g Instant Dry Yeast 100ml milk 35g sugar 350g flour 20g butter 50g butter - Mocha mixture: 3 tsp instant coffee 2 tsp water 60g butter 60g sugar 1 egg 70g flour Instructions 1) Add 110ml Water and 7g Instant dry yeast into a bowl and mix 2) Then add 100ml Milk and 35g Sugar and mix 3) Add 350g flour and fold 4) Knead lightly then cover with plastic wrap for 15 min 5) After 15min, sprinkle your hands and the surface with flour 6) Add 20g butter on the dough and knead well until the butter is combined with the dough 7) Then slap the dough on the counter for 5-7 minutes till smooth 8) Cover the bowl with plastic wrap and leave for about 1 hour till it has doubled in size 9) Divide the dough into 10 equal pieces and smooth the dough into balls 10) Cover w/ plastic wrap and leave for 15 min 11) Flatten the dough then add 5g of butter in the middle of each ball and form into a ball 12) Cover w/ plastic wrap and wait for 1 hour 12) Mix 3 teaspoons of instant coffee powder with 2 tsp of water 13) Add 60g of softened butter and 60g of sugar into another bowl and mix until combined 14) Add in 1 egg yolk and mix and then add in 1 egg white and mix well 15) Add in the coffee mixture 16) Sift in 70g of flour and fold 17) Put into a piping bag and pipe the mixture over the buns in a spiral shape until it covers the top of the bun 18) Bake at 170-180 c for 12-14min depending on your oven

I made these. They were excellent! I had to use evaporated milk instead of regular milk, so I added an extra 10 grams of evaporated milk (110 g total) to compensate. My dough needed an extra hour or two to rise, but because of the very good video I could match when it looked like the picture and it all worked out perfectly.

Tkanks for your recipe, I tried it first time today successfully, so I want to share my exp: - added more water (~ 1-2tsp) cuz felt my the dough a little bit dry - Replaced 10g milk by yogurt - Not put salt butter inside, my family don't like it, then I replace by chocolate cream, freeze to small cubes After all, I think this will be my best Papa - recipe for me ^^ The buns turned out very well, super soft, fluffy inside and my kitchen was full of coffee scent!!

Tried this recipe yesterday. The buns were soft and fluffy but lacked sugar and a bit of salt for flavor. Also I recommend using salted butter for this instead of adding salt to non salted butter. I’d even increase the amount of salted butter added for more flavor. All in all it’s actually a really good recipe!

This recipe actually shouldn't be sweet at all then you can add any topping you like .. I tried it in a Cafè with Nutella topping and you can feel the salty taste of the butter but it's really good

I did this and it turned out great! thank you the bread was so sofffttt but I forgot to add salt in the dough hahahaahaha so that was a letdown flavour wise. So to anyone who is planning to do this don't be careless like me by not putting salt in the dough haha.

HAHHA i was the opposite! they called for 7g of yeast (about 2tsp) and 7g salt. STUPID me didn't google to find out how many tsp was 7g of salt and threw 2tsp in, before realising that salt is much heavier than yeast and I just put double the amount of salt in

1. Tip for people living in warm climates: Use frozen/refrigerated butter at 4:24 as filling. Using room temperature butter may cause it to leak out of the bun when it's sitting for an hour. 2. The comment by My on the full written recipe omits 7g of salt. It makes a world of difference. Don't forget the salt!

Hi, I made this 2 days ago. It’s my first time making bread. I had 2 issues, could you give me some insights? :) 1. The topping was very wet aft the bread was baked. 2. The bread became hard? Like denser, aft 2 days. I also used lesser flour for the bread because it was look dry aft 300+g.

Hey, I had the same problem with the dryness of dough. I added about 15ml more water to my dough so it could form a singular dough. Different brands of flour work in different ways, so don’t be afraid to tweak the recipe!

Hunter Star hello! Here are some reasons your dough may have become dense: 1. Not enough kneading. When you knead the dough with the butter, you have to knead it till it becomes a dough like consistency again (which takes time, around 5+ mins). The recipe also calls for you to throw the dough for 5-7 mins which you should definitely follow (not just do it till the dough is smooth). 2. Weather/humidity plays a huge role in baking. It might not be your fault!! Sometimes it's too humid or maybe it's too cold. When proofing, doughs like warm temps (but not oven warm!!). 3. Not proofed enough. I always follow the 15 mins rest then the one hour rest after, maybe it's that?? 4. Maybe it's also got to do with the ingredients that you used? Different brands, different results. 5. With the coffee layer, if it's not as crispy as you want it, you could bake it for a little bit more, but keep a very close eye as it bakes really fast. 6. Lastly, wanted to add that you could make more of the coffee cream and if you have left over, it stays good in the fridge for at least a few days:)) Hope this helps!

OMG! I made some this weekend, with a tangzhong milk roll base. But after watching this , I now know I need to put more butter in the center, and I can reduce the coffee topping! I'm bookmarking this for the next time I make rotiboys! (I lived in Korea 2013-2015, and there was a Rotiboy shop in the commercial building on Jongro just in front of my apartment building. I loved their shop, and their buns!!!)

Hi i tried adding more coffee n sugar. However the topping slides off and only a thin layer remain on the bread when baking. The topping is not crispy at all. Its soft and wet. Maybe the sugar made it runny when its melted in the oven. I guess the recipe has its balance.

This is one of the best bread recipe I ever tried although I made a few adjustments on the coffee mixture the first time I tried it cause I thought it is too much. Instead of 3tsp coffee and 2tsp water, I did 3 tsp of water and 1&1/2 tsp of coffee. It still turned yummy and the coffee flavor was still strong but tolerable.

I suggest u mix the coffe with Nescafé cause I had try it and it give a very aromatic flavor😋😋😋

when you're baking the first batch (let's say there are 5), what do you do with the other 5 (second batch)? Do you just left them covered in room temperature to bake?

Really late, but you need to cover it and put it in the fridge in order to stop over proofing:)

더보기 설명란에 꺼낼때 쇼크를 주어서 꺼내야 빵이찌그러 지지않는다는 말이 무슨말인가요?? ㅠㅠㅠ 다구운후 꺼내고나서 땅에 치라는건가요?? 굽는와중에 오븐을 때려야하나요??ㅠㅠㅠ 1차발효후 반죽을 떼어내기전에 충격을 주라는건가요?? ㅜㅜ

오븐에서 꺼내자마자 빵이 있는 팬을 약 30cm 높이에서 '탕'내리쳐주세요 ~

레시피 감사합니다 !! 오늘 바로 만들어봤는데 반죽은 너무 잘 됐는데 전 왜 겉껍데기가 바삭하지 않고 눅눅하다가 축축해질까요ㅠㅠㅠㅠ다른 레시피로도 해봤는데 똑같아요,,, 중력분이랑 박력분 다 써봤는데 전 바삭해지지가 않네요,,,ㅠㅠㅠㅠㅠ

제가 아는 범위에서 답변드리면 오븐 환경에따른 차이일 수 있을 것 같습니다. 토핑쪽에 박력을 쓰시고 고열로 충분히 수분을 날려야 바삭해 질것 같아요. 이를 위햐서 오븐의 위 아랫불을 같이 켜지말고 윗불로만 익히시거나 아니면 굽기를 마치기 전에 윗불로 20도 정도 고열에 3~5분정도 더 익혀주시면 좀 나을 것 같습니다. 끝나고 충분히 식히는 것도 잊지 마시구요 식히기 전에는 박력은 무르니까요.

hi chef... I think there was something wrong with liquid...water 110g & milk 100g for the recipe however. Can you please re-advise it? 10z

The amount of liquid in my recipe is not a problem. The higher the moisture content, the smoother the bread can be. I have made the recipe through several validations. Many of you have already made a successful bread with my recipe. Thank you for your advice.

For my case, 1st time: the dough was a little dry. 2nd time I add 120g water, and the dough is looked just like in the video. I don’t know much about baking, just share my tries. Thanks for your recipes.

중간과정에서 반죽안에 가염버터를 넣는것은 필수 과정인가요? 만약에 생크림을 채워넣고 싶다면 어떻게 해야할까요ㅜㅜ 너무 맛있어보여서 꼭 만들고싶어요!!

선택입니다 ^^ 생그림을 넣고 싶우시면 아무것도 넣지 않고 구운뒤 완전히 식은다음 휘핑한 생크림을 깍지를 끼운 짤주머니에 넣고 빵아래부분에 젓가락 같은것으로 구멍을 살짝 내고 난후 짤주머니를 구멍에 끼워 생크림을 짜넣으세요 ^^

버터를 넣지 않으면 공간이 생기 않습니다. 버터는 넣으면 오븐에서 녹아 반죽에 흡수되면서 빈공간이 생기는 거예요 ^^
