Loved last year's cold brew coffee - it's that time of year again, time flew! A tip that I learned in science class/labs and that I teach students when filtering: premoisten your filter paper. In this situation, you want to save as much of that delicious smooth amber liquid to drip into jar vs getting absorbed by filter. Obviously, its only a little bit that would be sacrificed to the filter paper if you can't be bothered with this extra step.

@Nc Mendel We used a medium grind. A bit more coarse than a typical drip grind. Our Forte was set at 8D. Actual grind setting doesn't transfer well between grinders - even the same model. But, grind size isn't nearly as critical for this type of brewing as compared to espresso. Try a grind size in-between drip and press.

+Whole Latte Love I have a question: I recently bought a bag of coffee beans with a light-medium roast. I coarsely ground it for my cold brew. After only an hour or so into the steeping, the grounds sank to the bottom of my jar. Usually they float for a long time before the steeping is done. Is this an indication that my beans are not fresh or is it the lighter roast profile? (I usually brew with darker roasted coffee.) Thanks!

+helpfulnatural Great question! Not sure we have a perfect answer but have some theories. We don't think freshness has a lot to do with it. We use older coffee frequently (we end up with a lot of half used bags lying around) for making cold brew and have not noticed big differences in floating time. On the other hand, the fresher a coffee is the more gasses trapped inside. One would think that would make it more buoyant. More likely, we think a lighter roast coffee may have been grown at higher altitude - fairly typical for high altitude coffee to be roasted lighter. Anyway, coffee grown at higher altitudes tends to grow more slowly resulting in a denser bean. If the bean is denser, perhaps it becomes negatively buoyant faster.

Whole Latte Love Thanks so much for your reply! While I waited for your answer, I made a double shot of espresso with this new coffee. It tasted very good, very caramelly almost butterscotch-y. It's a Mexican grown blend from Tenejapa in the southern state of Chiapas. I have no idea if this is high altitude... Tomorrow morning I'll find out how it tastes in a cold brew.

Here's a quick tip to help simplify the process, instead of using a pour over or chemex to filter it, just take a regular basket coffee filter over your mason jar, screw down the screw band without the flat lid installed, then you have a secured filter and you can invert it over your second mason jar and just let it filter with out needing any attention. Since a chemex filter is thicker which produces a finer filtering, yet takes a bit longer, you can probably use one of those no problem since they do unfold flat.

I tried this with a paper filter for a mr. coffee with water and nothing comes out. Must be doing something wrong.

The fine coffee slurry, or sludge, is clogging the paper filter. Forget paper. I prefer two passes through a fine mesh sieve, than two passes through a standard gold mesh #4 filter. Pour slowly.

Well, after I strained the grinds I got about 2/3 of the mason jar full of coffee. I added 1 1/3 oz of Vanilla syrup and topped it up to the top with milk. Poured this over ice and WOW!!!! so good!! My husband and I loved it and I will be making more probably tonight to have it ready for when I need it. Thanks again for the video lesson.

@@rodneyjohnson7958 metric measurements *are* standard ans scientific measurements. The other systems like Imperial are *not* standard measurements. You'll never be able to do physics calculations *without* converting to metric units.

I love cold brew coffee for my iced coffees :) I never tried it for HOT coffee until recently, and OMG!! You were right when you said the flavour is SOOOO smooth without the acidity! I'm enjoying some cold brew Hazelnut coffee right now that I made the other night - DELICIOUS!!! I'm very "ghetto" and use a wire strainer with some paper towel to strain out the coffee. Works great!

@@iwouldbechelsea: In the years before automatic coffeemakers, we used a percolator coffee pot. The basket held the coffee grinds and the sludge after perking was almost unbearable. I discovered that using two kleenexes centered over the pot stem and pressed into the basket before putting in my grinds, then folding the kleenex over the grinds was as good as a filter. After the coffee perked, there were no grinds in the coffee. What a pleasure! Try it when you run out of filters or save your money and use kleenex instead.

+balderoine It's considered a light Northern Italian Roast. The coffee appears a bit darker than most for it's roast level so it sort of qualifies as a medium roast. It's the only roast level we carry for this coffee.

would there be any issue in putting the coffee grounds in a cheese cloth first and just tie it off, sit that in the mason jar? Possibly make filtering a bit easier?

Hi EK, Thanks for the question. It could work but you'd want it very lose in the cheesecloth so grounds make contact with all the water.

+bobnotaub Hi, Thanks for the question. For cold brew, we tend to use a darker roast which off gasses less. Also we're using coffee that is not exactly the freshest - it was at least 30 days from roast. Off gassing is more of a concern in pour over brewing to allow brew water to properly contact the grounds. With a long immersion time, it's not really an issue in cold brewing. We've doing cold brew like this for awhile and never had an issue with pressure build up in the jar.

Whole latte love: What I've tried is hot brewed then chilled. Warm brewed then chilled. Cold brewed. All three ways work and the bitterness is removed with the chilling process. The only difference is cold brewed takes longer.

Hi Dano, Thanks for the comment. When you say hot brewed then chilled do you mean brewed at typical brew temps of 195-205F then chilled? I find long immersion cold brewing (nothing warmer than room temp water) has a very different flavor than normal hot brewed and chilled. Also more concentrated with much higher caffeine content.

Buy a nut milk bag. You can find them at Whole Foods, or on Amazon. Put your grounds in there, tie it shut or use a twist tie, then put that in the water. Make sure the grounds get thoroughly wet then put your container in the fridge overnight. Much easier to deal with in the morning! Just dump out the grounds into the trash or compost, rinse it out and let dry for next time.

Is that 3/4 cup of coffee, before or after grinding? Also cold brew seems very expensive, seems like yo use twice as much ground coffee to make the same amount you would get in a typical drip coffee maker.

At 35, I'm just now a new coffee convert and learning how all of this brewing process and stuff works, but I'm wondering couldn't you just make a regular hot brew with a french press and then pour it over ice and it be just as good? The way I've been doing mine is to use half the amount of water you'd use in a typical cup and steep the grounds according to how many cups you will drink. That way it's concentrated so when I pour it over ice it'll be the right ratio (if that makes sense). Once I finish my ground coffee I currently have I'll be switching to whole bean. I don't want to use a drip coffee maker.

+pksmb1120 You can do it that way - that's what a lot of chain coffee places do. But, the flavor of cold brew made with cool brew water is very different than hot brewed coffee poured over ice. So much smoother!!!

Hi MG, We prefer grinding fresh from whole beans when making cold brew. Most preground coffee intended for brewing drip/filter coffee is too fine a grind for making cold brew. What you want is coffee ground relatively coarse. A little coarser than you would for a French press process. hey Morgan awesome video! ive got a couple of questions. can you brew the batch stronger, so it will be strong enough to pour hot water over so it wont be watery and thin, and at the same time have hot, cold brewed coffee that way? and second what music do you use in this video it sounds awesome in the end 😉

Hi Travis, Thanks for the kind comment and your question. You can always adjust the coffee to water ratio to brew a stronger concentrate. But, it's already rather strong as prepared in the video so it's not all that thin even when diluted. You can heat it up if you enjoy it that way. Basically, it's 4 parts water and 1 part coffee gronds. Don't worry, 4 cups water and 1 cup grounds does not = 5 cups by volume. I like cold brew coffee popped in the microwave for a minute for a very smooth cup of hot coffee. Super fast and easy after the brew process is over.

Whole Latte Love: What I do is heat water to boiling then pour over the grounds and stick into frig. The more you brew coffee regardless of temp, the stronger the flavor and higher the caffeine content. I don't drink more then 2 8 oz a day. If I plan on working out I drink strong coffee for the metabolic boost.

This is pretty close to my process. I actually do a two-stage filtration: I pour it over a fine-mesh kitchen (soup?) strainer over the paper filter holder cup. Directly into the paper filter clogs it pretty much immediately. I let it all drain for a while, then top off the jar with filtered water. Good to go. So smooth, so good.

Aaron Mosher Pre-filtering helps speed thing up a bit. In the video we used just a paper filter and it took 2-3 minutes total. Yes, so smooth!!!

Hi TN, Thanks for the question. Yes, it works with any coffee. I tend to prefer medium or darker roast coffee for making cold brew. Others may enjoy lighter roasts. Darker roasts tend to produce more chocolate notes and richer flavor. Lighter roasts tend to produce a brighter flavor and maybe even some fruit and berry notes. Marc

+eykyra Well we typically recommend a grind a little courser than what you would use for french press. Something resembling a course salt. So it depends on the grind size of the pre-ground. Typical pre-ground in the US for drip is a medium grind which is finer than what you'd use for press. Italian pre-ground coffee for drip tends to be finer than in the US. Some thoughts for using coffee ground finer: Use a completely cold process. So start with very cold water and let the coffee brew in fridge. Decrease brew time sample it after 12 hours. You may find it difficult to filter after brewing. Could get around some of that by letting the coffee settle in the brewer before filtering although some may float.

Mel Mason Hi Mel, as discussed at about 2:20 in the video a number of different ways you can strain/filter to reduce fines and cleanup your cup. In the video we used a paper filter. How far you go depends on how clean a cup you prefer.

I have and the results were okay. Not the same as grinding fresh but it works. Depending on grind size you might want to decrease immersion time to avoid over-extraction. So finer grind - shorter brew time. Cold brew is typically made with a coarser grind similar to French press or a bit chunkier.

helpfulnatural Seems like a lot of coffee but to put in perspective a fairly standard dose for a double espresso is about 17 grams. We used 50 grams to make slightly over 3 cups of the cold brew. 1lb. of coffee yields about 215 oz cold brew or 27 8oz cups. For coffee at $10/lb it works out to $0.37 for 8oz. (feeling mathy this AM). And, it's a bit of a concentrate so some will cut it with water when serving.

Whole Latte Love I'm the only coffee drinker in my house and usually grind just enough for 1 double shot of espresso for my morning latte. So grinding 3/4 cup seems like so much more coffee to me. :) But it is so worth it! I woke up this morning to a 15 hour brew that was so smooth and flavorful! I'll definitely be brewing this more often this summer! Thanks for the reminder of how simple and purely pleasurable this brew is. :)

Hi MTVA, Perfect and yes still has the caffeine! The difference with using a long soak in cold water is a smoother flavor and it makes a more concentrated coffee which can be poured over ice and/or cut with milk. Cold brew has all the caffeine - probably more as caffeine extraction is dependent to some extent on contact time with water. Marc

+Bejho Uhuy Hi Bejho, There are a lot of opinions on storing coffee. Seems to be a consensus that storing in fridge is not the best as the coffee tends to pickup odors from other things in there. Also overwhelming opinion that storing in freezer is a good option if packaged airtight and yes can be stored there for a number of months. How do you tell when it's gone stale? Flavor is a good indication. If making espresso and the coffee produced a nice crema when fresh but is not any longer that's a good clue as well.

Oh, so sorry thought you were referring to whole beans - our bad! Anyway our recommendations is 2 weeks. We usually date them after brewing and dump beyond 2 weeks. Imagine if it starts tasting funky we'd dump after 2 weeks. As far as freezing, we have not tried yet.

light to medium roast is where the coffee bean has the best flavor!!! this should be diluted with equal parts water or milk unless you prefer crazy strong coffee this will have more caffeine than a hot brew!! experiment.

Hi Ryan, Everyone has there preference of course! But here's the thing... the whole point of cold brew is it almost never produces bitter flavors - it's very smooth. We prefer dark roast for the bold concentrated flavor it produces. You can certainly use lighter roasts if you prefer.

Whole Latte Love I just made some yesterday and let it sit overnight, I used dunkin donuts classic (medium roast). Definateky shouldnt have eyeballed the coffee measurement because it is wayyyy to strong i cant even drink it. I think I used 4ish tablespoons of grounds and 20 oz of water. Any suggestions for a better ratio for 20 oz?

Hi Ryan, Are you using preground coffee? If so it's likely to fine a grind. Do know that most everyone dilutes cold brew after making it. Add some cold water or milk over ice to bring to a strength you like.

I'm confused with cold brew ratios. This video shows 19:1 (weight). Other websites say 4:1. I've also seen another video with 9:1 by volume. Which is the proper one, assuming a consensus is possible.

Hi Gino, Don't think there is a consensus on cold brew ratios. We've had good results using the 3/4c./50grams of coffee to what was about 800ml water in the video (didn't fill that quart jar full and the grounds took up some space). By weight we were at ~16:1. There are other variables involved like steeping time and temperature, coffee used, grind size, etc. Best bet is to try it and adjust to your taste. Find a formula that works for you and stick with that.

for other dummies (like me) easy rule of thumb is standard 1.5 oz pack of preground with standard bottle of water (16.9 oz). it is a tad stronger but it takes all the guess work out of it.

But, not sure how temperature plays into it. Can say this... Hi SP, Thanks for the question. 99% certain it's not a problem. I'm not a chemist, but a couple things I do know. First, water has O2 dissolved in in to begin with. Second, the water/air interface (note that air is only ~20% O2) does not easily transfer oxygen to the water. It's likely that coffee oils on the surface would slow any transfer as well. Third, many cold brews are made in drip fashion (drip towers) where the water and cold brew have a lot of contact with air in the form of drops.

Hi Jamie, Thanks for the question. So we rarely add sugar to our coffee. You might find cold brew is so much smoother than regular coffee you no longer need the sugar! But, if you insist, I would think sugar will dissolve in cold brew with a bit of stirring.

Jamie Nielsen - If you are planning on diluting the brew at least in part with water, try using a "simple syrup." To make a simple syrup, combine water and sugar in a pot and heat until the sugar is dissolved, stirring to speed the process & keep from burning. The proportions of sugar & water vary in different recipes I've seen in baking. I usually start with a 50/50 ratio for tea & other infusions because it's easy to adjust to more or less sweet. Hope this helps.
