If you add white coloring and everything happens to split into an oily mess like mine did 🥲😂 don’t panic! Just heat it a bit more/add a bit more heavy cream and it’ll come together!

I also went through a bunch of videos, and trying candy melts, but this hands down came out perfect on my first try and im new to baking! Thank you! I used white great value baking chips from walmart and heavy cream.

The most beautiful like is that it is very useful, but I am looking for a brand of chocolate colors on the Express website. Can you tell me what is used specifically for this purpose for chocolate, especially since chocolate needs its own colors and are they the same colors as the gel?

Curious as to why the printed out instructions say to pre-heat the heavy whipping cream and then add to the mini chocolate chips while the video says to heat everything together. Does this affect the final outcome?

You can always use chocolate melts. You can get them at your local walmart or any store like target. And the great thing is that it will come with different colors. AND IT DOESN'T SEIZE UP!💙

TY Chelsey! U r a LIFE SAVER! I couldn't find the Giradelli melting discs anywhere & in my past experience when I substituted those 4 the melting blocks & added color 2 them they hardened up & separated...DISASTEROUS! So now I know what 2 do & how 2 never do that again. GOD BLESS!

you can, as long as you don't use too much! But if you want a really vibrant color, I recommend using gel food coloring!

Yes! I always started with chocolate ganache, then mix in some black gel food coloring. It's so much easier that way!

I'm not quite sure as I don't really work with candy melts, but I would assume it's a similar ratio! I would experiment with a small batch, and see f the consistency is right by doing a couple test drips on a cake!

I never knew you can color chocolate candy. They told me not to it will seize. Will be trying this. Question, I wanted to know if you ever used flo-coat on any kind of chocolates including melts chips, if so how do you use it ?

I have used it once ! I added it to the melted chocolate before I added the food coloring, and it worked pretty well :)

Great video. I’ve been reading a lot of labels since I’ve gotten into baking and working with chocolate. It turns out most chocolate chips are compound chocolate with vegetable oils not real chocolate with coco butter. This allows them to hold up to the heat of baking better. Ghirardelli white chips/morsels are also compound chocolate. (Ingredients: Sugar, Palm Kernel Oil, Whole Milk Powder, Nonfat Dry Milk, Palm Oil, Soy Lecithin - an Emulsifier, Vanilla.) The ingredients are very similar to their candy melts but in different rations so the melts do melt well. Thanks again for the great baking videos.

I love the attention you're paying to your ingredients! You do need to be careful about what brands of chocolate you use, and also what adjustments you may need to make with different types of of chocolate

When storing the extra leftover ganache in the fridge (in the squeeze bottle container), how do you get it to the right consistency (to drip on cake again)? I would think using a microwave would compromise the plastic squeeze bottle container...no?

it doesn't, because you aren't going to heat it up too much! heat it in intervals of 15 seconds, until its just a bit warm to the touch!

One question on storing and reusing - do you reheat it in the microwave again when you take it out of the fridge and if yes, how many seconds?

yes! I do 15 seconds to start, then 5-10 second intervals until its seems the right warmth/thickness! It can vary depending on how wide your bottle is, and how much ganache is in it! Hope that helps!!

you can do either! I usually make them in advance, and chill the cake immediately after, to help the drips set.

Sorry for the delayed response! It depends on how much you need to add. If it's only a little bit (if you're making a pale color), you might be ok, but if you're going to a vibrant shade, I don't recommend it!

It can vary based on how much you have to heat the mixture to melt your white chocolate and how cold your fridge is! For me it usually take 15-20 minutes!

Real chocolate also tastes better than candy melts. I'd go with the store bought chocolate even though I have easy access to candy melts. Candy melts aren't even real chocolate.

Chelsweets I agree, on the Ghirardelli white chocolate chips. They melt the best & are delicious. Definitely better than melts. They sell them on Walmart’s website.

Appaddict01 These companies have everyone fooled bc their “white chips” contain no actual cocoa butter to call them chocolate. They are actually candy melts that look like white chocolate chips. Just read the ingredients on the bag of the Nestle and Ghirardelli ones and you’ll see they have the same ingredients as candy melts and no cocoa butter. You may like the taste better than the bigger wafers in the craft stores, but they are the same thing. There was a class action lawsuit and settlement about this misleading advertising. So far Trader Joe’s is the only grocery store that I’ve found real white chocolate chips.

ahh I need to update that! 2:1 is the ratio i prefer with mini white chocolate chips, but when I use regular white chocolate chips I've found I need to increase the ratio to 3:1!!

You can also add some dish detergent that cuts grease well, such as Dawn, fill half way up with hot water and shake vigorously to clean the bottles. Another way I’ve done it is to take a blunt knife or any thing long and narrow enough to reach down in the bottle, somewhat wrap a small dish cloth around the knife and insert it into the bottle and swirl, twist, move about as best as you can and simply rinse it clean. One other way is if you can find a slender baby bottle brush or anything similar to that would work great. Use your imagination and go for it!

HI! This recipe is not the same as the one on your website.. the website said 1cup chocolate and 1/3c cream. So which recipe is best to use ?

If you use candy melts, would the 3:1 ratio of candy melts to cream still apply?

it won't give you a very vibrant color, and can throw off the consistency of the ganache!
