If you add white coloring and everything happens to split into an oily mess like mine did 🥲😂 don’t panic! Just heat it a bit more/add a bit more heavy cream and it’ll come together!

You can always use chocolate melts. You can get them at your local walmart or any store like target. And the great thing is that it will come with different colors. AND IT DOESN'T SEIZE UP!💙

I'm not quite sure as I don't really work with candy melts, but I would assume it's a similar ratio! I would experiment with a small batch, and see f the consistency is right by doing a couple test drips on a cake!

I never knew you can color chocolate candy. They told me not to it will seize. Will be trying this. Question, I wanted to know if you ever used flo-coat on any kind of chocolates including melts chips, if so how do you use it ?

Great video. I’ve been reading a lot of labels since I’ve gotten into baking and working with chocolate. It turns out most chocolate chips are compound chocolate with vegetable oils not real chocolate with coco butter. This allows them to hold up to the heat of baking better. Ghirardelli white chips/morsels are also compound chocolate. (Ingredients: Sugar, Palm Kernel Oil, Whole Milk Powder, Nonfat Dry Milk, Palm Oil, Soy Lecithin - an Emulsifier, Vanilla.) The ingredients are very similar to their candy melts but in different rations so the melts do melt well. Thanks again for the great baking videos.

When storing the extra leftover ganache in the fridge (in the squeeze bottle container), how do you get it to the right consistency (to drip on cake again)? I would think using a microwave would compromise the plastic squeeze bottle container...no?

it doesn't, because you aren't going to heat it up too much! heat it in intervals of 15 seconds, until its just a bit warm to the touch!

yes! I do 15 seconds to start, then 5-10 second intervals until its seems the right warmth/thickness! It can vary depending on how wide your bottle is, and how much ganache is in it! Hope that helps!!

Sorry for the delayed response! It depends on how much you need to add. If it's only a little bit (if you're making a pale color), you might be ok, but if you're going to a vibrant shade, I don't recommend it!

It can vary based on how much you have to heat the mixture to melt your white chocolate and how cold your fridge is! For me it usually take 15-20 minutes!

Real chocolate also tastes better than candy melts. I'd go with the store bought chocolate even though I have easy access to candy melts. Candy melts aren't even real chocolate.

Appaddict01 These companies have everyone fooled bc their “white chips” contain no actual cocoa butter to call them chocolate. They are actually candy melts that look like white chocolate chips. Just read the ingredients on the bag of the Nestle and Ghirardelli ones and you’ll see they have the same ingredients as candy melts and no cocoa butter. You may like the taste better than the bigger wafers in the craft stores, but they are the same thing. There was a class action lawsuit and settlement about this misleading advertising. So far Trader Joe’s is the only grocery store that I’ve found real white chocolate chips.

You can also add some dish detergent that cuts grease well, such as Dawn, fill half way up with hot water and shake vigorously to clean the bottles. Another way I’ve done it is to take a blunt knife or any thing long and narrow enough to reach down in the bottle, somewhat wrap a small dish cloth around the knife and insert it into the bottle and swirl, twist, move about as best as you can and simply rinse it clean. One other way is if you can find a slender baby bottle brush or anything similar to that would work great. Use your imagination and go for it!
