+TheWolfePit Hahaha! Congealed fat is good stuff, and so are potato skins. You and I know that, and as JB says, people who don't can just stay stupid. LOL It's been ages since I've had it myself. Had it in few restaurants, and it was on a par with your canned pulled pork. LOL Making this batch has renewed my obsession to have it *a lot* more often! It was serious good eats!

Your kitten is so beautiful. Just look at him kneading the bed for you. This looks like a great meal - I like corned beef, but only a couple of times a year, while Pat would eat this exact meal (minus any green) every night for dinner. You make everything look scrumptious! - roc

+popparoc46 Rocky specializes in keeping the waterbed well fluffed. He thinks it's his mother. I'm with Pat! I don't know that I'd eat it *every* night, but I would sure eat it often, and the next corned beef I do, I'll be saving more of it for corned beef hash. I'd forgotten what a treat it is. Of course, I do eat green things too, but don't tell pat... :-P

Your phrase "Turn it, trying to keep it mostly in the pan" brought to mind the short order cooks at the Toddle House restaurants in my hometown back in the 1950s. They cooked hash browned potatoes in 19 inch skillets and would toss the potato bits high in the air during the process without losing a bit. "Gastronomic acrobatics" is perhaps a good descriptor. Great recipe by the way - I will attempt it in my kitchen on Halloween. I really enjoy your channel.

+medford briggs I have vague memories of a Toddle House, but a lot of brain cells have died in the decades since. Gastronomic Acrobatics is a good term for it. I've watched a lot of great chefs do extraordinary things that make me horribly jealous, but I'm resigned to the probability that tossing and flipping an egg without slinging its yolk all over the kitchen will be my life's crowning achievement. +FitAnge S Thanks, Angie! It left me wishing I'd made more. Next time, I'll save more corned beef, instead of making that last Reuben. LOL Rocky is such a jewel (in spite of being spoiled rotten). He thinks the waterbed is his mother. Oddly, he is so docile and gentle, I can set him on a bare leg and he won't bare a single claw. He's the only cat I've ever known that I could do that with.

Oh yeah sure blame the bed not being tidy on the cat....However don't blame an empty stomach on not having anything to eat as Moosie that was one RIGHTEOUS Hash - Heck Id eat that for breakfast lunch or dinner! GREAT job!

Looks pretty good there Moosie. BTW, rumors are that MaryEllen and Lloyd just picked up two "kitties" from the shelter. From their photos, I think they might be cats, not kittens

+Pat Farrell It would've been great for breakfast, and it was just as great for supper. I'm shamefully completely out of touch with Lloyd and Mary Ellen. Haven't heard from them for years. I think "kitties" is universal. My sister calls anything that purrs a kitty, be it 6 weeks old or 6 years. It's great they got them from a shelter. There are *so* many wonderful pets crowding them. I got Rocky from the local county shelter, and it was not easy to just pick one.

you know, I tried to flip something like this in a pan the way you did once, without a spatula. Most of it ended up on the top of my stove.

+Brian Yach LOL! My early attempts at tossing things will never be seen outside of this room. The real classic was my first egg. Very little of it made it back into the pan. We won't go there. All it takes, though, is a good saute pan and practice. At this point, it's so second nature to me that I never use a spatula with anything that's flippable. It's actually more efficient than stirring. Chef John at Food Wishes did a pretty neat tutorial a few years ago that helped me improve what was then a sloppy but effective technique.
