That is a picture perfect bird John!! That's my kinda gravy too!! I can't believe the weather we're all having......it was in the mid 60's Thanksgiving day here.......and today in the 70's.....that means next week we will have a foot of snow in Virginia!!! Excellent meal my friend!!!

+TheWolfePit It did make for a great thumbnail, didn't it Larry? It was one of those cooks where it comes out exactly like you wished it would, and I was really tickled with it. I think the new Maverick makes a big difference, too, eliminating guesswork and letting me constantly know exactly what was happening out there. You're having crazy weather up there! Is it snowing yet? I don't remember ever seeing 70° on Thanksgiving day in Va. The last Thanksgiving before I moved here, I drove down and brought the boat, and we spent two weeks water skiing and getting sunburned, and then drove back home to a frickin' blizzard. I moved here the following February. LOL

Moosie it's always so much fun to watch you cook. That turkey looked darn near perfect! Wow the skin on it was fantastic. I cheated on the stuffing as well. I usually do!! We had sweet potatoes too. I made them with marshmallows which I have NEVER done before and will NEVER do again! I really prefer my sweet potatoes just roasted plain. Our son was home and we had a great day! Why you had just a miserable day to cook didn't you! haha. It was amazingly warm here as well, in the 60's I believe. Hugs!

+imperceptibleme Glad you enjoy it, Melissa! Yes, it was one of those times when it came out exactly like I hoped it would, and the smokey flavor is delightful. I've done stuffing the old fashioned way before, and there's just not enough difference to make it worth the trouble. Pepperidge Farm is easy enough to doctor so no-one ever has to know. LOL I've never been a fan of the old fashioned sweet potatoes with marshmallows, just *TOO* sweet and gooey for me. Marshmallows belong in S'mores. I'm with you on making the potatoes themselves the star of the dish. My sister mentioned the unusual weather up there. Better take it while it lasts, because you could get a blizzard tomorrow. LOL Hugs back!

Wow everything looked good! I've always been a bread person. I can fill up on bread alone. I could have filled up on that awesome looking stuffing. I may have to try bacon with my brussel sprouts next time I do them up. wow!

+mobiltec Ah... But I got leftovers, Larry. I had a second feast Friday, turkey and Swiss sammiches on rye yesterday, and one of the legs with stuffing and giblet gravy today. When I'm bored with it and disassemble it, I'll have enough turkey in the freezer to last for months. Yes, it's work, and you've gotta want to, but I enjoy doing it, and the rewards are well worth it.

Everything looked so good, Moosie! The turkey was perfect. I wanted to peel the skin off and eat it! I would have to add mashed potatoes. To me, sweet potatoes are a side vegetable, not the starchy staple that white mashed potatoes are! Brussels Sprouts with bacon. Yes. Wonderful meal! I bet you enjoyed it! +popparoc46 Thanks, Roc! This turkey was right up there with my best ever. The cherry smoke did amazing things to it, both color and flavor-wise. I've been tending to skip the mashed potatoes in recent years, in favor of more turkey and dressing. I'll think about them, but then I talk myself out of it. Last week I carved up and froze leftovers, ran the remains through the stock pot, and made a big batch of turkey noodle soup and cornbread. Just killed the last of that yesterday.

+Southninja Thanks for bringing it up! That's a point I was going to mention and failed to. I'll add a note in the description. I basted it every hour on the hour with the leftover mixture from the injection. Total cook time was 3 hours 45 minutes.
