Sorry you can't make tortillas with this... Corn MUST go through a process called "nixtamalization" using LIME and hot water to soften the outer skin of corn and then Grind it either on a stone mill or a Metal corn Grinder, or the most traditional of them all it's the use of a "Metate". it is possible to use almost any type of corn to do it, I've never used popcorn thou...

Hi. I loved your suggestion. In Brazil, we love cornmeal. In Portuguese: "fubá". We have several delicious recipes. Try making this cake: Bolo de fubá (cormeal cake) * 1 cup of cornmeal * 3 tablespoons of wheat flour * 3 eggs * 2 tablespoons of butter * 3 cups (tea) of curd, yogurt or kefir * 1 cup (tea) of sugar * 1 cup of grated cheese * 1 tablespoon of baking powder * Beat in the blender Bake for 40 minutes at 180º

Great info! One spin I do when making cornbread, which I love making in a cast iron skillet or pan, I preheat the skillet in the oven, about 20 minutes so it's thoroughly hot, then a couple minutes before I'm ready to bake my cornbread I put about 1-2 tbs of butter in the pan, pop it back in the oven until the butter is melted and hot (don't burn the butter though!) Then I pour the cornbread batter into hot skillet with the hot butter & bake like usual. You get a crispy kinda crust that is so delicious& a fabulous texture! (Now I'm craving some cornbread!) 😆 Ice also baked my cornbread on the smoker- SO delicious!!

It certainly can dull the blades if you do it all the time. I don't recommend this method for all the time use, but if you are in a pinch and need cornmeal, it works great. If you really plan on grinding your own corn for cornmeal, I recommend buying field corn and a specific hand crank mill.

Yes there are several, but you still need something to grind the kernels. So if you really want to make this I suggest investing in an actual grain mill. @inthekitchenwithmatt
@inthekitchenwithmatt 10 ай бұрын
If you have easy access to cornmeal like we do in the States it is much cheaper to just buy cornmeal. Masa harina is made with corn that has been soaked in a certain agent to give it a distinct flavor. This will taste extremely to cornmeal used for cornbread, corn dogs, etc. But not like masa. But you can also try making tamales with it and see how it turns out.

Can you used deercirn to make cornmeal and grits?k a
@inthekitchenwithmatt
@inthekitchenwithmatt 2 жыл бұрын
Hello Patricia! Cornmeal can be made from pretty much any dried corn. It is normally made from yellow or white Dent corn which is a common ground/field corn. Lots of deercorn or feed corn is that same type of corn, so it will definitely work for homemade cornmeal. In fact popcorn kernels aren't normally used for cornmeal, it is just a substitute, when you don't have access to field corn. Here in the States, normal cornmeal is super plentiful and easy to buy, but a lot of countries don't have it, but for some reason they do have popcorn kernels, haha.

It depends on the type of corn flour. Here in the States corn flour is the same as Cornstarch which is not the same as corn meal so you can't make the substitution. If your corn flour is just finely ground corn that should work.

Hi Megan, actually tacos shells are made with Masa Harina, but I doubt you have that either in your country. This should work for corn tortillas as well, I have only ever used it to make cornbread. Try it with this recipe www.kingarthurbaking.com/recipes/thin-cornmeal-tortillas-recipe

can we use cornflour instead of corn meal for corn dogs? have you tried that?
@inthekitchenwithmatt
@inthekitchenwithmatt 4 жыл бұрын
Hi Sumal, it depends on what you are referring to. Sometimes cornflour is what we call cornstarch, and no that won't work. But if you are referring to a more finely ground corn, that can work, but it won't be the same. True corn dogs are made with corn meal, it gives them that specific taste :)

Hi Matt do you have a good Alfredo sauce recipe? There are so many out there and some say cream some say no cream. I’m so confused. HELP! I NEEED Alfredo sauce. If you’ve ever tried the Alfredo sauce in a jar you might understand. It’s hideous!!

A traditional Alfredo does NOT use milk or any kind of cream, but rather a bit of the boiling water from the noodles and some butter mixed into the noodles and repeatedly stirred. That’s not what we’re familiar with in the US and other countries though, where our recipes call for some type of milk added in.
@inthekitchenwithmatt
@inthekitchenwithmatt 4 жыл бұрын
@@bethanybdavidson Yes, if you say Alredo sauce here in the States, you expect a white sauce made with milk/cream. Traditional Italian Alfredo sauce is actually super easy, pasta water, good quality parmiganio-reggiano cheese (not the powdered stuff that comes in the cylinder container, haha), and butter. Only three ingredients. So it all depends on the kind of sauce you are looking for.

Can i use fodder corn?
@inthekitchenwithmatt
@inthekitchenwithmatt 2 жыл бұрын
Hi there! Pretty much any type of dried corn should work just fine. You can even take fresh corn and dehydrate it and then grind it up. :) In fact all of those are probably a little better to use than popcorn kernels. But popcorn may be easier for some people to find.

OK. Now I feel kinda dumb. I never thought about using pop corn to grind cornmeal. My daughter was recently told she needed to be soy and gluten free for some health issues. Being the main cook in the family, I'm looking at inexpensive alternates to the way overpriced health food stores in the area. I will be trying this today. Thank you for the great idea and informative video.

You are welcome! If you live in the States, regular cornmeal will be better and is super cheap. But it is fun making your own. If you can get your hands on some dried field corn, that is even better, since authentic cornmeal is made from that.

You can just use the corn grits as is, but yes if you would like to further refine them, throw them in the food processor or high speed blender for 30 seconds to a minute or so.

This is from popcorn kernels. If you are going to grow corn, there is a specific kind that you grow for popcorn. Although for cornmeal, you can grow any corn, dry out the kernels and then make cornmeal with it.

hmm, I have tried whole feed corn, only popcorn kernels. Popcorn kernels are pretty darn hard, but it still works in my food processor. The other option would be to get a hand crank mill, which will grind up that feed corn. Something like this amzn.to/2Xt8vvp But if you live in a place where cornmeal is readily available, just buy that. It is fun making it at of popcorn and then baking with it, though!

If you do it all the time, it probably will. If you were going to make it all the time, you would want to buy a professional miller. But if you can find cornmeal easily at your supermarket, there really isn't a reason to do it this way, unless you just want to try it out.
