Big Fish Fry on the Griddle - Fried Fish, Cornbread Cakes, Potatoes and More!

Join my Dad and I for a big fish fry on the griddle! You all know that we've been fishing recently, so for this big griddle Sunday dinner we're cooking up fish three ways - deep fried with a 2 part beer batter, shallow fried with a light breading, and blackened.
And of course you know we're making all of the big Sunday dinner sides to go with it! We'll show you how to make the best Johnny cakes with my chile cheese cornbread mixture, and we're doing some fried potatoes on the griddle too.
Homemade pinto beans with ham hocks and a simple coleslaw finish out this delicious fried fish on the griddle dinner!

That fish looks amazing! When I make fish tacos, I use what you describe as shallow fry. I mix equal parts of flour, cornmeal and a Mexican rub and pan fry the fish. I have friends who don't like fish tacos but ask for mine. It is so good.

Neil, I told you how to make your cornbread crispy every single bite every single time! Make hot water cornbread. Get a pie slice cast-iron skillet pour about a cap of oil in each slice. Use cornmeal i use white lily cornmeal and then get your water hot like what comes out of your coffee pot. Mix it up real good and it’s going to be a thinner consistency. While you’re mixing your cornbread put your skillet on top of the stove and when the oil starts smoking then you spoon your cornbread mixture into the skillet and then it goes into a 500° oven for usually 6 to 8 minutes. Just keep an eye on it when it browns. I promise you will never eat cornbread another way if you like crispy cornbread.
