I had a brazilian boyfriend for three years and his mãe would cook us so many delicious brazilian treats like pão de queijo and coxinha! And we ALWAYS had guarana antartica or caipirinha! We broke up five years ago and I still make her Feijoada recipe to this day... brazilian food is the best! I can’t wait to make these, I didn’t have her recipe and boy have I missed them!!

Hilah, When you make the dough you need to put more fat in the water. I use butter, 2-3 table spoon of butter in a hot water. And before the dough cool down totaly, i knead the doug. When you do in this way, the dough do not be sticky. Sorry for my english.

I watched how a brazilian man made these just now on here and he added like a tsp of cream cheese to it. i like the fact Hilah is using cumin but there needs to be butter added fer sure.

There's a lot of variation on this dough. Some people add an egg after kneading for a while. But the best variation is too add a pureed potato, it leaves the dough so much softer and velvety It's 10pm right now in Brasil and I want some coxinhas... darnit!

I am an American that has lived in Santa Cruz Bolivia for the last 30 years. Here we can find Coxinhas everywhere. Have also eaten them on visits to Brazil. Great finger food you can find on the street there.

Some slight variations in my process ... 1. For the dough I poured the boiling broth into my kitchen aid stand mixer bowl. Added the flour and set to low speed to get things combined, turned to a medium-low speed (3) for about 3 minutes to get a smooth (but sticky) dough. 2. I used my food processor for both the onions and chicken, and ran them both through until they were completely shredded into super fine pieces. 3. I cooked the coxinha's in the oil at around ~275F until they began to float. They had a light golden brown texture. Great job on the recipe!

If you add a bit of mashed potatoes, the dough gets even better, like one small potato smashed. add to the dough or to the flour when you are stirring the dough add, to the pot.

That works! the coxinha dough have a lot of variations, in some parts of Brasil they use mashed potatoes in the dough, on other regions they use more fat or less fat.

Cada caldo kinor ( tablet ) tem 56 gramas geralmente se põe 2 a 4 dependendo da quantia, pra essa receita que mencionei, vai dar 112 gramas ... pq não sei se existe líquido, mais aqui nós usamos tablets...

Is the dough supposed to be mushy after frying? I had one, and it had the consistency of raw dough 😄 is that normal for this dish?

It's not supposed to be lumpy. Boil half a liter of the chicken stock with half a cup of mashed potato and 2-3 tablespoon of butter, add 1.9 cups of flour at one go and stir quickly, lower temperature and stir on the stove for a minute than start kneading with wooden spoon while hot immediately and continue with hands when you are able to handle. It should turn rubbery, smooth. Don't add more flour on the go, just keep kneading with buttered hands. Good luck!

I dont know if this is usual where the brazilian girl comes from, but seems the way the chicken was cut is unusual and would afect the final result. I would suggest you people doing the recipe to boil the chicken and after cold shred it using the hands, this one seems like it was cut into cubes using a knofe. It is better shred and then cut the long shreds in half if needed
