Crawfish Boudin Balls
Ingredients:
Crawfish tails
Boudin
Pepper Jack Cheese
Green Bell Pepper
Celery
Yellow Onion
Green Onion
Jalapeño
Eggs
Minced Garlic
Flour
Plain Panko Bread Crumbs
Shrimp and Crab Boil
Creole Seasoning
Cayenne Pepper
Garlic Powder
Onion Powder
Directions:
1. Shred 2 cups of pepper jack cheese
2. Dice a jalapeño
3. Chop 2 stalks of celery
4. Chop 2 stalks of green onion
5. Dice 1/2 green bell pepper
6. Dice 1/4 of yellow onion
7. Cook boudin according to the directions on your package
8. In a skillet, add 2 tbsps of olive oil
9. Add trinity (celery, green bell pepper, and yellow and green onions); Cook until translucent
10. Add jalapeños
11. Add crawfish tails
12. Add 1 tsp of minced garlic
13. Add 1/2 cap of shrimp and crab boil
14. Season to taste with creole seasoning, garlic powder, onion powder, and cayenne pepper and allow to cook for 5 minutes
15. Remove skin of boudin and place boudin in a large bowl
16. Add crawfish and fold in
17. Add 2 cups of pepper jack cheese and fold in
18. Form boudin balls and place on a baking sheet lined with parchment paper
19. Freeze for 30 minutes
20. In a bowl, add 1 cup of flour, season with creole seasoning, and whisk
21. In a separate bowl, add 1 cup of Panko bread crumbs, season with creole seasoning, and whisk
22. In another bowl add 2 eggs and whisk
23. Coat boudin balls in egg wash, then flour, then back into egg wash, and then into panko bread crumbs
24. Fry crawfish boudin balls until golden brown
25. Enjoy!
