I love these. I hate overly wet crab cakes. I also appreciate that he didn’t use salt and old bay seasoning as if old bay doesn’t have salt in it. We use entirely too much salt on our foods.

You can use canned. Works well. They still taste great. Here in the midwest you have to pay a huge premium to get somewhat fresh. Previously frozen fresh that is

Could you do an American style gyro recipe?? I was thinking it would be cool to make a recipe for this marinating sausages with greek spices then barbecuing them. American gyro meat is just a huge sausage type thing anyway. I don't have the skills to know how to do this best myself though. You can probably come up with something even better and easier though.

I expect your team to know and teach better. Adding oil to butter does NOT change the temperature at which the milk solids will burn, nor does it change the smoke point. It does NOT allow you to cook at a higher temperature at all. It simply allows you to get more fat in the pan without having to use more butter (which is (a) more expensive and (b) less healthy than the neutral oil).

Keeps it cool over ice in the refrigerator?? Dude, time for a new fridge if you need ice in it. ""Flatter them out with the palm of my hand" as he presses them down with his fingers. Yep, then back into the fridge to dry them out while he breaks out the skillet and oil he should have already had. Yep use that parchment paper and still leave crab cake on it. Big surprise, he burnt them.
