Whether for new subscribers like me, or those that already know, it helps me to learn by drilling it into my head over and over. For me, it never gets old. I made these with a shrimp binder, and then made crab cake sandwiches on brioche buns. Bib lettuce, heirloom tomato and some thick slices of bacon. Remoulade with cornichons and everybody went crazy. Served them with homemade vinegar and sea salt kettle chips and a bucket of ice cold beer. Thank you chef!

Losing a spouse is incredibly difficult...Your entire life is turned upside down and emotions are an unmanned 24/7 rollercoaster ride..I'm so pleased to find out someone else has had their passion for cooking rekindled in life after losing a spouse. Went dungeness crabbing yesterday. Today we will be feasting on crab cakes. I followed the recipe except I had no salmon but I found tucked away a can of crabmeat in the cupboard and a lonely small cod fillet so that's what I made my mouse out of. The cakes turned out beautifully. They are in the fridge chillin for the next couple of hours. Our mouths as salivating waiting for the first bite . Thank you for another grand slam recipe. My family knows as long as I continue watching all the videos the food will continue to be restaurant quality.

I am one of your regular followers and so grateful for your weekly videos and your 50+ years of experience as a French chef. I'll be making these crab cakes this weekend and serving as an appetizer at a small dinner party I am having with friends. The nice thing about your channel is that I watch your videos after you publish them, decide what dish(es) I would like to try to make (I try most of them), and order (online) whatever required ingredients (i.e., Phillips Jumbo Lump Crab) I do not have in my pantry and/or refrigerator. After I have all ingredients pulled together, I tune the video up again and cook the dish with you - just as if you were along side me in the kitchen. AMAZING how my finished product usually turns out just like yours. Thank You! Thank You!

The way you decorated the Crab Cakes is amazing. The micro greens was so beautiful and using the ring to keep them together. True perfection. I love your techniques so complimentary, we do not eat seafood i.e. crab, shell fish, it looks amazing but no thank you. I am sure white fish will work, just work gently not too much mixing, and finish off the same manner. A pleasure to eat and enjoy.

Thank you, Chef: My good friend sent the video, and he knew I needed a recipe without mayo. I used flounder as my binder and cooked them in my air fryer (light spray of olive oil over cakes just before cooking). Served with homemade cocktail sauce. Absolutely delicious: everyone loves them perfect crust.

Ah the days in the Kitchen, good memories, 10 hours a day 6 days a week, hit the door running and leave if you were lucky, "but before you do can you tie 72 chickens for the rotisserie to help out the night chef." Cooks that don't show up and doing the work of three people most of the time. And of course the amazing, indispensable, shlepper, shlepping.

Up here in the PNW, the Dungeness crab is plentiful and arguably the best tasting crab there is. Last weekend I shelled a dozen crabs for hours, and had 2.5 pounds of crab meat to make crab cakes from. I've never been able to master how to keep them from splitting when you try and form a patty, now I know. Thanks for all the great content.

After watching this video more times than I care to admit, I ordered a bunch of things from Chef JP's store . Armed with my new Woll pan, garlic salt, silicone mat and Herbes De Provence I made this last night. My wife does not like dill so I went with parsley. It was amazing ! Made the shrimp mousse crab cake for NYE…SO FANTASTIC! Rave reviews and perfect with champagne. I used the same crab and wild pink shrimp. I made a few extra and carefully wrapped for the freezer so that we can have a special meal whenever we like. Thanks, Chef. You never disappoint! ❤️

OMG! I had some excess salmon that was on its last day, so I reviewed this video and dug out some frozen shrimp and gave this a whirl. I didn't have any bell peppers so I substituted red and yellow sweet mini peppers and added some sliced green onions for color. I was not really expecting to like this but wow! it was AMAZING. Thanks, chef for teaching such a wonderful, healthy and delicious recipe.

God Bless You! With only 2 of us to cook for, I have hesitated purchasing the crab from costco, because it is simply too much crab for one meal, so I love the idea of freezing the extra cakes for another day! This way we have no waste, and I'm sure you and i were raised by the same mother, because she also taught us not to waste anything when cooking! I always chuckle when you referen that when scraping a bowl or pot. We are so blessed to have you teach us, and I know we have a piece of pvc for my husband to cut a mold for me. You are the BEST!

Made crab cakes for friend Saturday night and it was wonderful. One of my friends is allergic to eggs and dairy, so some substitutions were needed. I used olive oil instead of egg for the mouse, and then used burrata cheese for the mustard sauce as I did not have sour cream. My allergic friend had cocktail sauce instead of the mustard. To quote Chef, it was fantastic! And Chef is correct, even a child can do it. Fabulous and many thanks!

Chef I've been working on the menu for my wedding (30 ppl, pre cooking and freezing everything) and I just found the appetizer! I think making them bite size for appies would be better for my needs, but I think they will be awesome! BTW, the rest of the menu is your bacon wrapped chicken loaf with the mushroom sauce and your mashed potatoes! You inspired the hell outta me!!!

Its Thursday so we watched the morning video for chicken cake, but we are preparing crab cakes for lunch. We put them together pretty early, so they were able to chill for 2 - 2 1/2 hiurs, which made them so.perfect for Browning & popping n the oven. We used the bake function on our Gourmia air fryer (from costco), it only took 8 minutes at 375 to reach 145 degrees. The texture and flavor were outstanding, and the shrimp mousse is amazing as a binder, without adding a yucky 'filler'. Highly recommend making these crab cakes OFTEN!! THANK YOU CHEF! 👏👏👏👩🍳👏👏👏 btw, the pvc form...GENIOUS!!!👏👏👏
