I am obsessed with these oven chips! Hands down the best chips I've ever made. One tweak I've made is to season the corn starch goo, results in a better seasoned chip

I made both for dinner today. I had to use two ovens because they cook at different temperatures, but they both came together beautifully!

We love the Guitard deep-dark chocolate chips. Less sugar, great chocolate flavor and they store well. We have a precious few buckets of them in our downstairs storage room. When tough times come, some comfort foods will become priceless.

Tried the fry recipe and these truly were the best oven fries I’ve ever had. Not burnt, not “raw/hot”, and not tasteless steamed pieces. The cornstarch is odd but it does work. Here’s a tip too: if you don’t have cornstarch, try egg whites. Gives a similar crisp texture on the outside.

I just happened to make some baked or roasted chickpeas last night and when making them I remembered this video and Lan Lam using the corn starch to make the fries crispy and crunchier. I went just by memory and didn't have the proportions exact but they turned out great. I went back to this video just now to get the right proportions for the corn starch mixture. I am going to try this on other baked or roasted things. I was going to add seasoning to the corn starch mixture but then forgot about it. I think it will be better to add the seasoning in before baking to get everything evenly coated. Than you guys for a wonderful idea.

You didn't ask the important question: do the chocolate taste better if you mix them together? Since they are chips, you can get different flavors as you bite into the cookie! For the mitts: I think it's more a lesson that a mitt fits the hand. I can see some ladies with small hands use kid-sized mitts. As a male, I love BBQ mitts because of how well they protect my hands, and they just don't mess around I also recommend more than 2 mitts because if you get a non-silicone mitt wet, the heat will go right through the mitt. 3-4 is much better. The extra 1-2 mitts also means that you don't have to hesitate about putting mitts into the washing machine. I do like the liquid resistance of silicone mitts, but yeah, they do sacrifice comfort and flexibility

I loved the deviled pork chop. Especially the explanation of the term "deviled"😁. I was also very intrigued by the oven roasted fries. I recently purchased a breville counter oven with an air fry function and I'd like to see some recipes developed for using that function 😁. I also loved Dan's little bit on non-Newtonian liquids and thixotropic solids 😁

My Oven fries are MUCH easier ... even less fat and only take 20 minutes and no fussing!!! I have a Calmdo Air Fryer. I cut the Yukon Gold's and put them in a plastic bag and add 1 tsp of Onion powder, 1/4 tsp paprika or cheyene pepper, 1/2 tsp salt -- place them on the wire rack and set for 400 degrees for 20 minutes. DELICIOUS!!! I sprinkle with apple cider vinegar so I ca avoid the sugar in ketchup. My grandkids love them!!!

Mini CONVECTION ovens, and that's what makes the difference. Standard ovens with convection are quite a bit more expensive than those without (at least they were a couple years ago when I was looking for a new oven). So, having that feature, in a small footprint totally sold me on the idea.

You might try using peanut oil if you have it available. It adds a huge level of flavor to fried/roasted potatoes. And I think mixing in about a teaspoon or so of onion powder to the cornstarch goo would be a huge Improvement in flavor. I love simple and delicious items like this.

I can appreciate that you may not want to endorse a specific product while doing recipes as viewed on screen with labels covered, but from my personal experience, I know that Pam cooking spray does a better job than the local grocery store brand; I know that Grey Poupon dijon mustard is better than the Walmart brand. While the variances might seem minor, it can make a big difference in the finished product.

Gonna try that pork recipe! Love mustard and vinegar, but generally marinate the heck out of chops and braise them unless I'm making weinerschnitzel or a quick fried chop topped with sofrito. Will probably use thinner chops because I like lots of flavor and don't need so much meat.

The recipe for potatoes is good, but I recommend using tongs to lift off the foil. You want to keep your fingers away from the steam that gushes out. (Don’t ask me how I know.)

18:40: Rather than stirring the slurry every 20 seconds---causing excess wear and tear on the microwave---why not just cook the cornstarch mixture on the stove in a small pot?

It's difficult to get Yukon Gold where I live. Would it be bad to use Russet potatoes? Would that work ok?

No reason you couldn't, but russets are thicker skinned, drier, blander, and starchier tasting, which is why they're better when baked and loaded with delicious things. Yukon Gold are buttery and delicious even when all you do is boil them.

Just out of curiosity, when did salt shakers totally go out of style? No matter how you try, the sprinkle method leaves clumps of salt here, bare spots there. The salt shaker, OTOH, dispenses it evenly. Why do we never see chefs using them anymore?

It’s not easy. Natural food co-ops or delivery services like butcherbox seem to be the best bet. American hogs are bred to be very lean which means the meat dries out easily. Heritage breed pork is fattier and doesn’t need enhancing but the hogs tend to be more expensive to bring to market size. You will pay more for natural pork but it’s worth it.

The taters look tasty. One question: Are you using corn starch, rather than potato starch, because it's better, or because we all have it in our pantry? The purist in me would want to use potato starch.

I think it's because corn starch is more common. The potato starch wouldn't brown as well. You need a little more protein for browning.

I've only ever lived in the South, and every market I've ever lived around does but I can imagine if you're very rural you might not find them. They're so popular these days. If all else fails, order from amazon. They're worth keeping stocked in your pantry.

Where did you hear two teaspoons of salt? She put 1/8 teaspoon of salt in the crumbs and one teaspoon in the paste, so it's roughly a quarter teaspoon per chop.

Warning: the fries recipe is crap. The corn starch only creates a weird coating that’s crispy. Like a thin, chewy, slightly crunchy thing. It’s super weird. If you want crispy fries, don’t bake them. If you want oven fries, make oven fries but avoid this nonsense. It’s like coating your fries in crispy cellophane 🙄 better off making an actual batter than wasting your time. I’ve made many recipes from ATK and support them heartily but this was absolute insanity.
