Ok, so I'm experimenting and trying your recipe tonight for a last minute potluck...there's no real plan B in this scenario, lol. But this looks so delicious and simple I had to try it. My only issue is that I have a 3 qt slow cooker so I had adjust the measurements and kind of wing it. Wish me luck, lol.

Follow up: Everyone LOVED it! Honestly , I think the pasta and the cream ingredients make a HUGE difference; I love the ricotta and pasta choice; a lot of people use spaghetti and cottage cheese which texture wise doesn't taste as good as this version. It is up there as one of my go-to meals to cook! Thank you for sharing this recipe! It's great!

I want to make this but wonder how drastically I would compromise the whole dish without ricotta? I don’t have any and don’t have a way to acquire it lol

Honestly not that much. If you wanted, you could substitute with a small curd cottage cheese but not absolutely necessary. It's more about texture and layers of flavor :)

Ya know, I've never tried it on the stovetop so I'm honestly not sure! I would guess at least 30 minutes or more. Especially since you're having to wait for the noodles to be cooked. :)
