Kraffins with praline paste 🐣
🥛Preparation:
300 ml milk (10 fl.oz)
20 g sugar (0.7 oz)
15 g fresh pressed yeast (0.5 oz)
150 g flour (1/3 lb)
🥛Prepare the sourdough.
1. Mix warm milk and yeast.
2. Add the sugar and flour through a sieve. Stir to combine.
Cover and let rise in a warm, draft-free place for 1 hour.
🥄 Dough:

100 g eggs (2 eggs)
100 g sugar (3.6 oz)
5 g salt (0.5 tsp.)
500 g flour (1 lb + 1.8 oz)
100 g softened butter (3.6 oz, 82%)
🥄 Prepare the dough.
1. Stir the sourdough, mix it with the eggs, sugar and flour sifted through a sieve.
2. Add salt and knead the dough.
3. Add the butter and knead the dough.
4. Cover and leave to rise in a warm place without drafts for 1.5 hours.
🍯Stuffing:
200 g praline paste (7 oz)
100 g butter (3.6 oz, 82%)
🍯Prepare the filling.
Mix the praline paste and butter, whisk until fluffy.
🐣Form the kraffins.
1. Grease hands and table with vegetable oil.
2. Divide the dough into 6 pieces.
3. Roll out each piece in turn into a 3 mm thick rectangle.
4. Spread a thin layer of filling (1.7 oz per piece).
5. Roll up the dough with the filling.
6. Cut the roll lengthwise down the center, a few centimeters short of the edge.
7. Wrap the outside half of the cut roll in a "snail" shape. Then wrap the second half in the same way and place on top of the first.
8. Form 5 more kraffins in the same way.
9. Transfer the kraffins to the baking molds.
10. Allow the kraffins to proof at room temperature for 1 hour. Cover with a towel or clingfilm.
11. Place in a preheated 360F oven and bake for 30-35 minutes.
12. Decorate with powdered sugar.
