I made your Danish cookies today & instead of a piping bag or a cookie scoop, I rolled the cookie dough into a log & cut little coins & squished each piece of dough to make them look like pebbles at the beach & then I baked them & they tasted great. They melt in your mouth. You can use that method for all kinds of cookies.

I used a 1/4 c of cake flour to 3/4 c AP, Irish butter and no egg. Wow!! They are softish, but only because I didn't let the bottoms brown enough. There will definitely be a next time for this one - and I'll let them bake longer. Thank you - so delicious!!

@@inthekitchenwithmattYou could have piped out some pretzel shapes in this video & then sprinkle them with granulated sugar. That design is awesome & the texture of the sugar on the top of these cookies would taste really awesome.

What is the difference between Danish butter cookies & Shortbread cookies? I have seen some recipes for shortbread calling for confectioner’s sugar instead of normal sugar. Also, some Danish cookie recipes don’t call for eggs but for this one it’s optional. The only thing I feel like is different is Danish cookies have vanilla & shortbread doesn’t. Also, I heard you can also use almond extract in this recipe too if you want as well. Can you please tell me the difference between the 2 in terms of the ingredients being used in each type of cookie?
@inthekitchenwithmatt Жыл бұрын
They are very similar but the ratios of the ingredients are different and slight differences like the use of egg or vanilla or almond extract, etc. But the core ingredients are the same.
@maxduong4537 Жыл бұрын
@@inthekitchenwithmatt Also, for shortbread, some recipes call for cornstarch & that ingredient makes them snap & when you put it in your mouth, it should melt in your mouth. Another thing is some people say that you can add vanilla into shortbread like maybe no more than 2 tsp. I feel like the 2 types of cookies are super duper close cousins to each other. But there are no rules on what to add to them. If you want to add something like vanilla or almond extract to either of those, that is your choice. But the core Ingredients like the butter, sugar or powdered sugar & flour are the main components for both types of cookies. It’s really hard to tell the difference because they are very close cousins to each other, but no matter what you call them or what you add to them, they will still taste delicious & melt in your mouth. Let me know what your thoughts are on that.

Yes Max as we have discussed on numerous other occasions. You can add whatever you want it is your cookie. But if you want it to taste exactly like intended you should always follow the exact recipe first before making any changes. @@maxduong4537

@@inthekitchenwithmatt I made them today for the first time & I added an egg to it & they tasted great. However, trying to make designs on them with my fork was tough because it stuck to the cookie dough after scooping them out onto my parchment. I tried using a little sugar in a dish, but it still didn’t work. But I loved them. Next time, I want to try them without the egg & go back to the original recipe the way that it was intended first.

The designs work better if you use a piping bag with a decorative tip.@@maxduong4537

if you want tougher cookies, you can reduce the proportion of butter. but those look near perfect.
@inthekitchenwithmatt2 жыл бұрын
Thank you! These are pretty tough! With less butter, they will be even harder to pipe, if you want designs. Of course, you can always add 1 egg to help it. A lot of recipes include an egg. I wanted to show an eggless one, since lots of people don't eat eggs.

Most people including me don’t have an 1/8 tsp measure at home. So in that case, we can either eyeball it by measuring the salt about halfway full with the 1/4 tsp measure or we can think of 1/8 tsp like a pinch of salt. Sometimes, in the kitchen, we need to be flexible if we don’t have a specific tool or so.
@inthekitchenwithmatt Жыл бұрын
Yes just eyeball a 1/4 tsp and only fill it halfway. And no it isn't most people every new set of measuring spoons includes 1/8th tsp. So lots of people have their own one especially if they have bought new measuring spoons in the past 5 to 10 years. For example here is a really popular set on Amazon with over 40k ratings. www.amazon.com/Spring-Chef-Magnetic-Measuring-Stainless/dp/B07DJ53GZQ

Not a common flour where I live.
@maxduong45372 жыл бұрын
When you said that if we don’t have all purpose flour then we can use cake flour for this recipe in this video, I feel like it’s not uncommon that a lot of people don’t have plain flour. Almost everyone should have AP Flour. But I know cake flour can also be used if desired as well for this recipe. AP flour is always a staple ingredient in the house.
@inthekitchenwithmatt2 жыл бұрын
Yes AP flour or plain flour as it is known in many other countries should be readily available. But sometimes people run out and they have cake flour on hand.
