Love the Gordon fish idea. Soon we won’t have any fish in Del Tacos fish tacos. Your kitchen is almost the same as mine except I used black appliances. ( went against the chrome trend). You need more taco holders

Shred the cabbage as fine as you can get it. That helps a lot! I use a mandolin because its foolproof but good knife skills will get it done too.

@@howtocooke My problem has always been the fish. Always try to do it from scratch and it never turns out like I expect. Guess I'll have to trust the Gorton's fisherman next time.

Do you remember Fresca's Mexican Grill? They had insanely good fish tacos. (And fire roasted salsa) There used to be one on Lake Forest drive between Rockfield and Muirlands, I think the one in Costa Mesa is still open.

I loved that place. It was over by Pep Boys. Tossing the cabbage in some lime juice and salt, then letting it sit for about an hour makes these tacos a million times better! I've always been chasing the Fresca's flavor and that gets some what close.

I love the ones here. They are large filets. I'm actually glad they don't have jalapeños in their pico. I can't have spicy food.
