How to make Delectable Spicy Pickled Carrots

Welcome to Sandra & Geronimo's Kitchen...great Recipe to make your own Delectable Spicy Pickled Carrots, feel free to add as many Pequin Peppers as you like. Spicy Pickled Carrots are delicious Condiments.
Spicy Pickled Carrots
Ingredients:
1 lb. Carrots (7-8)
14 Pequin Peppers (more or less to your liking)
1 sm. Onion
2 Garlic Cloves
1 Bay Leaf
1-1/2 cup Water
1-1/2 cup White Vinegar
1 tbsp Sugar
1 tbsp Pickling Salt
1 tbsp Oregano, dried
Cut Onion in half and slice.
Slice Garlic Cloves.
Remove Stems from Pequin Peppers.
Peel and slice Carrots on the bias.
Combine Water, Vinegar, Sugar, Salt, Oregano & Bay Leaf in a Pot.
Bring to a boil, stir to dissolve Sugar & Salt.
Add Carrots, Onion, Garlic & Pequin Peppers.
Simmer 8 - 10 Minutes.
Carefully fill Jar.
Enjoy!
