Recipe Ingredients:
282g Softened unsalted butter / marg
282g Castor sugar
1/2 table sp Mixed Spice / or to your taste
141g Egg
565g SR flour
169g mixed fruit
Method:
1. Preheat the oven to 190c - 200c fan
2. Put the butter/marg and sugar, vanilla into the bowl of a freestanding mixer with 3 speed, then beat until light.
3. Scrape down and start adding in the egg over 5 mins on 2 speed
4. Scrape down and then add in the flour, baking powder and mixed fruit & mix for a further 1 min on 1st speed until clear
5. Put mix on to table, now mould into a round ball and roll out to 4 mm thick, and with 3 in or 4 in cutter, cut them out and put them on to the tray
6. Prepared baking tray with oven paper .
7. Bake on the middle shelf of the preheated oven for about 10-15 minutes until they are a pale golden colour.
8. Remove from the oven and put on to table, now cover the top of the biscuit with a sprinkle of castor sugar
9. Cool on the baking tray for 5 minutes then
10. Move to a wire rack until completely cold
