I LOVE black-eyed peas, and I think this is the very first recipe I've seen done to do something special with them, other than just opening a can, and heating them as a side dish. This is definitely a winner. Even someone on a fixed income, if they know a gardener can fix this and it will be great at a low a price. It would be super great on a crispy lettuce wrap or a lettuce cup. Eat it like a sandwich.
