I have had both, plus Chicago and California styles - they are all very different dishes and hard to compare. Detroit style is superior to Chicago style in my opinion - much lighter. NY style is ok.

Finally...I found the pizza of my dreams....Many many years ago in Brooklyn, NY under a trestle one shop with one older Italian woman made this pizza, but it only had sauce, no cheese and the crust was just like this. It was AMAZING. A true Margherita pizza. Thank you so much!

YES! I’m surprised to see a Detroit style pizza! When I tried Buddy’s years ago, it INSTANTLY became my favorite pizza of all time, literally. I didn’t expect to see this here because it always made me sad that I couldn’t have Buddy’s easily since I don’t live in Michigan! Thank you so much!! I can’t wait to make this!!!!!! The edges are definitely the best. Though, when I’ve been to buddy’s, I think they used more sauce than this. Also, theirs raised a little higher I think. Regardless, this looks delicious! I’m so excited, thank you guys!

They freeze super well since the sauce is on top. You can just make a few, freeze it, stick in oven when needed-- no need to adjust cooking time.

I can remember back when Microplane/Grace-Manufacturing still had the patent, so it was just called a "Microplane grater" as opposed to this generic term, "rasp-style grater" that is new to me.

Originally from Detroit here now living in Maryland. We actually didn't know Detroit pizza was a thing...to us it was just pizza. Lol Buddy's was always my favorite! We bought the special pan to make it at home now and it's pretty darn close. We get the brick cheese from Wisconsin and just love it. You can't get this type of pizza here in Baltimore.

Target sells a perfect pan to make this pizza, for about $5! Target brand 9 x 13 inch steel cake pan, nonstick. If you can get pizza dough from Trader Joes, or Publix, or make it yourself, it is easy to make this style of pizza. ALSO: true Detroit style pizza has pepperoni too, not just cheese and sauce - pepperoni goes on first, below the cheese. Detroit pizza places also put on a bit of Parmesan cheese on the top - for flavor and crunch. Buddy's is great. But Shields is another longtime Detroit pizza house and is worth seeking out, along with Cloverleaf.

I use a mix of mozzarella and muenster cheese for Detroit-style and I like to cube it. I love that this type of pizza doesn't have a lot of sauce since that's the part I like least. We live in West Michigan and our favorite place to order this type of pizza from is Jet's, which started in Sterling Heights. They do sauce under the cheese -- I just ask them to go light -- and the crust is fantastic! They offer an 8-corner pizza (two 4-slice pies) so every piece is a corner piece. Yum!

Pasta with butter and cheese is great by itself or can be the base for modifications. Add cracked pepper for Cacio de Pepe, add half pecorino Romano cheese for a tangy alternative, add a bit of crisp bacon for a meaty alternative, etc.

Waitress at Buddy's had spent much of her childhood in Sicily. So yes, it is a Sicilian style pizza. The mainly unique aspect is the pans.

I have a quarter sheet pan that is absolutely black and absolutely non-stick! I have home care and one time I had a caregiver try to scrub the black off! I told her it's not dirty it's well seasoned it's supposed to be that way. I rescued my prized sheet tray and it sits on my stove all black and one of my prized pans. :-) I don't like thick crust pizza. I always said if I wanted bread I would eat bread. It looks lovely but one slice and I'd be done. :-)

Great video. One question: you recommended using medium speed to knead the dough; however Kitchenaid clearly states never go over #2 speed for dough. They claim that higher speeds damage the mixer and void the warranty. Comments? Thanks

You want a full fat mozzarella in a block. If you can’t find it just buy string cheese and cut it up as many string cheeses tend to be full fat. If not available, buy mozzarella in a block and shred it yourself. Pre shredded cheese is chemically treated and tends to be dry. Despite what some recipes say online, we Detroiters do not put cheddar on our pizza. Monterey Jack would be a decent choice although not traditional Detroit style. When in Detroit, skip Buddy’s and go to Loui’s in Hazel Park or Cloverleaf in Eastpointe.

In baking "the autolyse method" refers to a process by which ONLY water and flour are mixed and allowed to sit for a period. In this period amylases hydrolyze starch converting them to simple sugars and proteases encourage the breakdown of proteins into amino acids and smaller polypeptides. Mixing the yeast in means you just made normal dough and are not using the autolyse method.

Born and raised in the Metro Detroit area. I've never seen the striped toppings before, but other than that, it just looks like deep-dish pizza to me. Is this one of those things that is so much a part of my local culture that I don't realize it _is_ my local culture and not common everywhere? I also wonder if it's significant that both Domino's and Little Caesars are native to this area; maybe they took what _was_ a local specialty and popularized it across the country, so that it now _seems_ common everywhere.

@@BlueHen123 Actually if you watch taste tests of pizza, even outside the US, Detroit style does really well. It holds its own against New York and Chicago. See when people aren't prejudiced by where they grew up, they actually like it. As for Little Caeser's and Domino's those are mainly cheap chain pizzas. You get what you pay for. Economical for families. In reality there are great local pizza places all across the USA. It all depends on the makers.

As far as I know, you should pass the grater over the peel to remove it! You can better see what your doing, as not to remove the bitter pith with it! It is made to grate and hold the peel in its channel, and all you have to do is tap it in your pot or plate! Chef for 55 years!

I'm an American living in Rome and my husband is a Roman/ Sicilian. If I made him this Fettuccine he might divorce me😂 This American dish is a short cut of Spaghetti Carbonara. The sauce is made with egg yolks, hot water, black pepper and a good amount pecorino cheese. It's simple creamy Roman goodness. I never knew, being a New Yorker who grew up on food I thought was Italian food in the US, was nothing like the food we eat in Italy. It's a completely different universe of good. Food in Italy is a religion. As a Cuban Puerto Rican Bronx girl, I understand that kind of passion when it comes to food. This Fettuccine in an Italian context is sacrilegious 😂

This dish isn't related to Carbonara, it's related to "pasta al burro" - an authentic home-style Italian dish of simple buttered noodles with cheese usually prepared right in the serving bowl for kids & for those recovering from illness who can benefit from its blandness. Early last century, Roman chef/restaurateur Alfredo di Lelio boosted the luxurious indulgence of the much-loved but humble comfort food pasta al burro by doubling down on the butter & cheese. His version was a hit with his patrons including visiting Hollywood icons & became popular in the US. Just as di Lelio did , US chefs put their own stamp on his variation & boosted the indulgence factor even more by adding cream & even bechamel sauce. But the original Fettucine Alfredo as created in Rome & still served by his grandkids in the Piazza Augusto Imperatore at their family restaurant Il Vero Alfredo is closer to this ATK buttered fettuccine method descended from pasta al burro than it is to most US versions of "Fettuccine Alfredo" which today bear his name. Should you be using cooking spray on nonstick pans? I seem to remember manufacturers saying the spray forms a shellac when heated that actually ruins nonstick surfaces.

John Amidon this is correct. A build up will develop and cause the food to stick. I use grape seed oil in a spray bottle.

Cooking spray has too many other nasty things in the can besides oil. I use a trigger handle spray bottle that can handle evoo. Those cans of Pam can be used to keep wet snow from packing onto snow shovels.

Alfredo absolutely did not invent this recipe , indeed in Italy we don’t consider it a recipe , it’s what we cook when someone is unwell or for small children . No Italian would ever serve this to anyone whom came over for a meal , for instance , as it would be embarrassing as it’s so easy , something you do in less than a minute . The reason no one in Italy knows what fettuccine Alfredo is it’s because it’s called ‘ pasta burro e parmigiano ‘ literally translated as ‘pasta , butter and Parmesan ‘ .

You can give Buddy's credit for popularizing this type of pizza but you're likely going to start a war saying that they originated it. I'll let someone else tell you about Louie's. Only in Detroit would that be called pizza. Anywhere else it would be called bread sticks with sauce.

I grew up eating that in Texas - they called it French bread pizza, and it sucked. Kind of a decent bread stick, not much as a pizza 😎
