Who likes donuts or doughnuts? In this episode of In the Kitchen with Matt, I will show you how to make donuts, pumpkin cake donuts to be precise. Tis the season for pumpkin goodies, and since I got a request to make donuts, I decided to do these pumpkin cake donuts. They are super yummy, super light and fluffy, and of course, are really easy to make, if I can make them, you can make them. Let's get baking!

Ingredients:
1 1/2 cups of canned pumpkin
1 1/2 cups of granulated sugar
1/2 cup of canola or vegetable oil
3 large eggs
2 cups of all purpose flour (2 tablespoons less)
1 1/2 tsp of baking powder
1 1/2 tsp of salt
3/4 tsp of cinnamon
1/4 tsp of nutmeg
Topping:
1/2 cup of granulated sugar
3 Tbls of cinnamon

Hello and Welcome back to In the Kitchen with Matt; I am your host, Matt Taylor. Today I am going to show you how to make donuts, specifically how to make pumpkin cake donuts. Mmm they are super yummy. I had a request to make a video on doughnuts, so here you go, let’s make some pumpkin cake donuts. Let’s get started. First let’s preheat the oven to 350 degrees. Now what we are going to do is we are going to take 1 and ½ cups of canned pumpkin, let’s go ahead and put that in this bowl, one half cup of vegetable or canola oil, one and a half cups of granulated sugar, and 3 large eggs. Okay and then we go ahead and mix it with a hand mixer or you can do this in a stand mixer if you want, just until it is nice and blended together. Okay let’s go ahead and set this aside. Now let’s blend together our dry ingredients. We have just shy of 2 cups of flour, about 1 and ¾ cups and a couple of tablespoons, and then what we are going to do is add 1 and ½ tsp. of baking powder, 1 and ½ tsps. of salt, ¾ tsp of cinnamon, and 1/4th tsp of nutmeg. Go ahead and whisk this together. You can also sift it all together if you like. Now what we are going to do is we are going to add the flour mixture a little bit of a time about a fourth of it at a time, and then with a wooden spoon we are just going to stir it in to blend it, we don’t want to over mix it. Okay, some more flour, go ahead and scrape the sides, okay our batter is ready. Now we take our doughnut pan, I sprayed this lightly with kitchen spray. If you don’t have a donut pan, I put a link down below in the description where you can pick one up. Then what we are going to do is take a spoon and go ahead and we are just going to put it in there. You can also pipe it in with a piping bag that works really well. And we want to fill it up, oh about three quarters of the way full. Then once you are done we are going to pop this in the oven and we will bake them for 13 to 14 minutes until a toothpick will come out clean when you poke it. Okay once our pumpkin cake donuts come out of the oven, what we are going to do is we are going to take one half cup of sugar, 3 tablespoons of cinnamon and we are going to go ahead and mix that together with a fork. After our donuts have cooled for about 5 minutes, we are going to put them in our cinnamon and sugar, so just go ahead and take them out, they will come out nice and easy, go ahead and put them in there, and you can just do one side of them if you want, like that, looks awesome, or you can go ahead and do both sides. Now if the cinnamon mixture is having trouble sticking you can go ahead and lightly baste the doughnut with butter and that will help. Use your hands and put it in there. Ooo looks awesome. And you can certainly dip these in a glaze if you want, totally up to you. Yummy. All right our pumpkin cake donuts are done. They look amazing. They were really easy to do, if I can do it, you can do it.
