Lately I been using Sue and Gambo as a reference for my stir fry... the recipes are simple and straight forward and impart that authentic flavor that you'd expect from Asian stir fry and are cross flexible to other techniques and improvising.

Can i ask you what rice and how you prepare it for this dish? I use white jasmine rice as its all i find in the Chinese supermarkets here in the UK but even if i use less water it always fluffs up and sticks to each other when its been steamed. Even after allowing it to cool even refrigerating it its still sticky and comes out the bowl in clumps which tend to stick to the bottom of the wok even on full heat and with smoking oil.

lo mein in chinese means mixed together. Cantonese chow mein is where the noodles and vegetables are separate or placed ontop of each other.

when you order chow mein in the UK you get what is known as lo mein in the US. I moved to the US, ordered some chow mein and got crunchy noodles! It was then that I learned the difference.

their food is good with no wok spins and bouncing that 98% of restaurant chefs do. They waste energy and may injure themselves and the food is no better!!
