If you clicked on this video hoping to watch me extract the nectar from dandelion flowers and perform an enzymatic reaction converting it into sugar (honey) im sorry to dissapoint. Rather, this "honey" is an imitation but in my opinion the best there is. It is a great option for vegans, those who cant afford honey or just to have fun. Thanks for all your views!

@@ElinWinbladA lot depends on if you follow proper canning protocols, which I didn't in this video, but keeping it as an opened/used jar it should be fine for a month or so in a pantry. Otherwise it could keep for many months in the fridge.

Hi, that looks so good. You can also wash your jars in hot soapy water, shake the water off and put them in the microwave for about a minute and a half and they'll be sterilized. I'm making some! Jude, from Kentucky ✝️🐴🇺🇸⚒️🇺🇸🌱

Hi! Maybe I overcooked it. Just checked this morning, and it's rock hard. I can heat jar in a pot to use. It tasted awesome! I was just stumped.

Do they have to best fresh dandelions or can they be dried? Also is the shelf life as long lasting as regular honey?

I've never tried dried dandelion for this but don't see why it shouldn't work. I'd imagine you wouldn't need as much petals. The shelf life is as good as any sugar syrup. It will most likely crystallize before going bad.

Have you tried water bathing the jars after you fill them with the "honey" for longer storage time? Or do the lids typically ping just from the boiling/filling process? Just curious...

I water-bath 8oz jars for 15 minutes and I just cracked open a jar I did last spring and it is still perfect.

I really don't know enough about their physical properties. It's possible if they thicken like sugar, but I can't say whether th flavor would even be in the ball park. Maybe a hybrid recipe? Like 50% sugar, 50% monk fruit 🤷♂️

Monk fruit will crystalize into very pretty huge crystals that just don't work right and stevia gets horribly bitter when cooked down. My roommate is diabetic and because she loves the taste of dandelion flowers I dried her a bunch of greenless blossoms and she makes tea and then sweetens with monk fruit.

After soaking the dandelions in a jar, it shot water out the top and emitted a smell. Is it okay to still use the dandelions to make honey?

@TheNorthwestForager The step where I boiled the water and added to the jar of full of dandelions, I tightened the lid pretty tight tight. After I opened the lid, water shot out everywhere

I forgot to add lemon juice at the beginning of the process and it crystalized... If I heat it up and add lemon now will it help decrystalize it?

It's always been my understanding that it increases the chance of crystallization. But there's still a lot I have to learn about the different sugaring techniques.

Hey quick question……. Is there an easy way to make dandelion lemonade??? Back home I’d always get a lavender lemonade, and since they are flowers to just curious if you’ve ever tried that, keep it going with the dandelion stuff I love it!

Hey Emily. I haven't tried it but I don't see why it wouldn't work. If I we're to try it, I'd make a dandelion tea like I did for the honey and use that to supplement the water in a regular batch of lemonade.

There isn't a recipe I'm aware of. The sugar is what creates the consistency. If anyone sees this and has a thought I'd be curious to learn another way.

This recipe is a dandelion flavored sugar syrup. As far as I understand, excessive consumption of any form of sugar is unhealthy, even bee-made honey. Personally I'd consider this better than eating straight sugar but not better than abstaining from sugar, if that helps...

There are vegans who won't eat honey because it was made by bees. I personally don't have anything* against real honey, however I'm not a vegan. This recipe is good for someone who wants to make a honey substitute that taste like the real thing.

It’s not vegan because vegans avoid causing harm to animals as much as practicable, bees are animals, some bees are killed during honey harvesting and some cruel tactics are used in commercial bee keeping. Since you don’t need honey to live and can practicably avoid it, it’s not vegan

It's real sugar, just not bee honey. The purpose is to make a sugar syrup that tastes similar to honey not a diet syrup. Vegan means no animal products, has nothing to do with health. If you are concerned about sugar intake than this recipe isn't for you.

All you really made was a simple syrup. Honey is an absolute misnomer here, as honey is made by bees, not with cane sugar. If it were truly vegan, they'd try to make it taste like meat. We are omnivorous, hence incisors and canines , not all molars.
