"Today, I'll be showing you how to make a traditional old Irish recipe; Dandelion honey. This is a great alternative also for vegans. Let's forage some wild dandelions together and make a batch to drizzle on cheese on toast, porridge, yogurt, or in tea. It's so versatile and absolutely scrumptious!

Dandelion Honey
100g freshly foraged dandelion flowers
3 slices of organic lemon
2 slices of organic orange
350ml of fresh water
Tea spoon of pectin or add an apple while cooking
300g organic cane sugar
After picking the dandelions, shake gently to remove any critters and pluck off the petals into a sieve. Wash well with fresh water. Place the washed petals into a bowl and add freshly boiled water, and pour over the petals. Allow to sit overnight to infuse. The following day, strain the infusion through a muslin cloth. Add this liquid to a pot, then add your lemon, some orange, pectin (or a chopped apple) and sugar. Bring to the boil, then turn down the heat and allow to simmer until a thick jam-like texture forms. Take off the heat and allow to cool a little before pouring into a sterilised jar. Enjoy on hot toast, a spoonful in tea, drizzled over a cheese board, or on top of porridge.

I truly loved the whole Dandelion " honey " process!❤ You know, I would rather call it Dandelion jam or marmelade , since I regularly make homemade apple and rasberry marmelade for years. With 2/3 Stevia sugar. And the process is similar. (And for the last 3 years, I create homemade delicious black multigrain sourdough bread!) I also use a sort of natural pectine, too, for my marmelades, which helps me create them within less boiling time. . Your Dandelion "honey" has for sure a transparent golden colour that looks like so much to that of honey! And it must be very delicious, no doubt! Thank you for all the useful informatiom about it!! 👍❤️❤️❤️🎶 PS: Your Articrafts are very original and a pure Beauty! I could have never imagined the whole Love and Art in this process without you!🥰🥰🌈💕

Gillian, are you vegetarian? I love the homemade honey recipe as I’m vegan and don’t use bee honey. Sweet 4 legged fur babies and scenery. I am in awe of it all ☺️♥️

It's hard to define under one label! I eat mostly a vegetarian diet but with dairy, fish and sometimes free range/organic chicken. I don't eat red meat. You should definitely try the dandelion honey- it's wonderful! ☺️♥️
