Alternative for regular kunafa and much easier and faster
Ingredients :
1 cup of mascarpone or ricotta cheese, ready or made at home (link below)
1 cup shredded mozzarella cheese or fresh cut very small
kunafa dough stays covered all the time
1/2 cup 1 stick of butter, or 113 g (melted) or you can use clarified butter
Chopped pistachio for garnishing
Simple syrup, the link below
Steps:
-Take a long strand that is three fingers wide and cut them in half, about 12 inches long
-Add the filling about 1 tbsp. or more and roll as tightly as possible. Try to tug the sides in.
-Arrange all rolls in an oven safe dish 8x8 " and cover.
-Cover and put in the refrigerator for half an hour to an hour.
-Melt the butter, let it boil for a few minutes, get rid of the white foam, then let it cool.
-Spread over the Kunafa rolls generously with ghee or melted butter
-Bake at 375 Fahrenheit for 30 or 40 minutes until browned
-Place it under the broiler until it reaches a beautiful color from the top.
-Pour warm syrup over the rolls (link in the description box)
-Garnish with chopped pistachios
-Serve warm
Note, in case you want to make a larger amount, of course, everything must be doubled
