3-2-1 Ribs aren't complicated either you just need to have a smoker/grill. 3 hours at low heat(150-180F) on smoke. 2 hours medium heat (200-250F) wrapped in foil with a basting liquid of your choice(Coke, Dr. Pepper, Apple Juice, Beer Ect). 1 hour direct heat (250-275F) to brown and baste using liquid from step 2. IMO anyone who sauces their meat during cooking is hiding something. Sauce should be served on the side and used as needed. My ribs never need sauce.

Wow, someone that knows how to cook ribs. I am so tired of hearing people use the phrase "fall off the bone" If the meat is falling off the bone you have over cooked the ribs, period. Anyone can make ribs that fall off the bone, just keep cooking them until the meat is mushy. A properly cooked rib should still be meaty and solid, but you can bite it off the bone clean. If the bones are falling out of your ribs as you take them out of whatever cooking method you used, then you have turned the meat into mush. Bravo.

Yes! A lot of people these days if given a chicken would not know how to or want to kill it and process it for food even though they eat chicken. Same with a lot of animals

If you can't find the foodservice film, just ask a local, small restaurant, if they would order it for you. A decent restaurant (especially if you go there to eat every once in a while) will happily help you out ordering it along their usual orders. Tip them some for it and it's all good. Just don't ask them during their rush hour, but during a time it's rather empty.

I worked in a culinary school for 15 years. I can see you are a teaching chef in every video you make. I love your videos and look forward to seeing where you go with this channel. Also, thanks for making sure people understand this was a grilling video and not a bbq video. As someone who lives in a state with a long bbq tradition, I appreciate it when people acknowledge the difference.

This is the second application where chef recommends the use of food film. I feel like this is foreshadowing. Like in a future video he’ll say, , “...if you have been watching my videos for a while, you should have food film...” and all the attentive viewers will run to their pantries, and pull it out😂

Stopped right here 5:44 and ordered my own box of food service wrap. FINALLY this question has been answered, many years ago I was watching that dinner and dive show and this guy pulled the dish out of the oven and peeled back this plastic wrap... the meat fell apart. They never explained this... Chef just did thank you..now back to how I'm going to make ribs frm now on...

Frank's channel is gonna take off in a big way. I could very easily see him hitting 200k+ subs within the next two years--which is serious cash on its own. Then you consider his gigs with Epicurious, the culinary school, and whatever other chef stuff he does on the side.

I love the minimalist approach to the videos. The lack of an overzealous editor is a breath of fresh air. It feels like you're actually trying to get your cooking know-how out there, and not your brand. Great video.

Frank, this channel is beautiful. Great tutorials, great knowledge, great food and most of all a really talented (as far as I can judge, I'm really not a pro), personable, ground to earth, wholesome guy. I rarely cook anything I see on cooking channels because there's just so many steps that weren't explained in a way that I can reproduce with my low-budged student kitchen equipment. But this is just beautiful. I can really taste the food just by watching you cook. You're really inspiring. Thank you. Please stay just as awesome as you are.

Had to say this now I did these ribs, I cooked them last night and grilled them today. I used double aluminum foil bc I did not have the correct plastic wrap; they were fantastic. I did keep them at 350 for 2 hours bc I had two racks in the oven. Everyone in my family loves them!

I just made these last week and they were amazing! They were simple and tasty. My 8 year old added them to his top 5 food items of all time. This will be made over and over again and as a bonus, I really enjoy having the giant roll of foodservice quality plastic wrap. Use it all of the time and I do like it compared to the normal food consumer version. Keep up the great work Frank!!

This reminds me of reverse searing that i do with steaks. The char just helps increase flavour (maillard reaction). Easy way to get good ribs

There is a place in my city that uses this method to cook their ribs but instead of grilling them to finish they deep fry them. The ribs were voted one of the best appetizers in the country!

Can't wait for the grill tips video. And that plastic wrap technique looks like it would be good for things like a silvertip roast and other cuts, will need to get food service grade wrap now.

I learned this technique from a friend (pitmaster) in Arizona...you can use ANY plastic film as long a it has a high self cling ability...I personally have found the walmart GreatValue brand and actual Saran brand wrap works best...just make sure you have at least 3-4 layers of plastic before applying foil

In winter I use the brown feature of my multi cooker after the oven and fridge. Cut into 3 bone pieces and tent them inside. 15 minutes later a touch of summer in New England winter.
