How to Make EGGPLANT PARMIGIANA Better Than My Italian Mum

Eggplant Parmigiana has delicious layers of eggplant, fresh tomato sauce, basil, and melted cheese. There are variations of the dish that use bread crumbs and eggs, and everyone's family makes it slightly different. My mother shared with me her Eggplant Parmigiana recipe, which was taught to her by my Nonna Igea, her Mum. Although they may not be impressed, I did tweak it a little and in my opinion, made it even better. Hopefully, they would be proud if they tasted it!

Beautiful, this is my wife's favorite dish. The only thing I do instead of a colander . I use a baking sheet tray with a wire rack. After I salt the eggplant. 👍🏾👍🏾

The only changes that I prefer for my own is to use low moisture "scamorza", which is whole milk mozzarella that has a lower water content. Also, coating the slices in an egg wash before coating with flour will.makeca better crispness. Finally, adding some oregano to the sauce might be nice.

This is very different from what is served here in the Northeast US. Here eggplant parm is used as the filling for a submarine sandwich. I've never seen it served like lasagna. Looks delicious, I'm definitely going to try this.
