The reason tart fruit tastes even more sour than usual when fizzy is that when CO2 combines with the water in the fruit, it form carbonic acid. Acid always tastes particularly sour (just like citric acid, vinegar, etc).

Julian Poon My point has nothing to do with whether or not the box is air tight or not. It doesn't even have to be - however, the higher you maintain the pressure inside, the more CO2 will infuse into your fruit.

I did this a couple years back for an eclipse watch party. Very popular. You can do it with most devices used to carbonate water as well (though maybe not the soda stream). I have a tank of CO2 at home and a connector to carbonate 2 liter bottles and have carbonated fruit by cutting it up and putting it into the bottle too.
