No. Pop rocks are something entirely different. We have Pop Rocks in the UK. They are crunchy, sweet and pop in your mouth. Sherbert is just a fine, sugary powder that can also be tangy and fizzy.

If you live in the US and you've had a Zotz candy, sherbet is the stuff in the middle. Acid, base, sweetener, and flavor. Now that I know how to make the stuff, I don't have to suffer through the hard candy part anymore. Huzzah!

In North America, Sherbet and Sorbet are both available, but the terms are not interchangeable. Sorbet has a fruit-only base, whereas Sherbet is more-or-less the same thing but with dairy and/or eggs in the mix. Sherbet (powder) is also available in bigger cities, but for some reason it never really caught on here.

In america we call it pop rocks. Sherbet in america is a fruit based frozen treat. A bit like ice cream but not dairy based.

All materials, including water get more dense when they're cooled down(cold things get smaller). BUT water is very special, because it reverses once the water is below 2 or 3 degree celsius and it suddenly becomes less dense, meaning that the same amount of material takes up more space. That is why ice is less dense than liquid water and floats on top of it. It's a bit difficult to fully understand maybe at your age and I'm not sure if scientists are absolutely sure why water behaves this way.

If you make a Google image search on "sherbet" and look at the top rows it's actually a pretty close race between images of the frozen type and the powder stuff, although I would say that overall there are more images of frozen deserts ;)

question though: you say the bicarbonate reacts with the citrus to sort of neutralize it. yet you taste the bicarbonate right after the citrus, doesn't that interrupt your tasting process? i think it was this weeks masterchef that Heston Blumenthal explained a thing or 2 about taste and how it can be manipulated. I believe he had something rather sour, added salt and after that it tasted more sweet... strange stuff

Never heard of sherbet as a candy in the US sherbet is like sorbet(fruit flavored ice but scoop-able so not hard like italian ice or snow cone) but with milk, but not as much cream as ice cream. Also you mean acid-carbonate reaction not acid-base cuz not all acid base reaction will release co2

What you Americans call "Sherbet" is actually SORBET (and closer to a mostly non-milk alternative to Ice cream). The rest of the English realm's Sherbert is more like Pixy Stixs and other fizzy-power sweets.
