I've been searching for a good recipe to make these for years. I am so happy I found this video, thank you for making it and explaining the proces behind the short grain marshmallow. I made mine with agar agar to make them vegetarian (start with cold water, then cook, then add to the mixing bowl). I dried them in a proofing box at 35°C. It worked so well! Again, thank you! Edit after I read the other comment: I used supermarket grade banana flavor (1/4 tsp) and it worked great.

amazing video! I always enjoyed that crunchy chewy foam texture, but the packet of only bananas from the supermarket are way too hard, and not chewy enough. I wonder if there is a way to make them sugar free? I couldn''t even eat more than 2 because they were so sickeningly sweet

1.) I used 1/2 cup cold water to 3 packets of gelatin and let it bloom. (I might try 3/4 cup cold water next time because it was a little hard and had sucked out all the moisture from the gelatin) 2.) After comparing other marshmallow recipes, I only used 1/2 cup water with the corn syrup and sugar mixture.

1. Local shop flavours and colours are too watery for sweet making. They dilute the mixture and make it difficult to set and tasteless. You used Super concentrated colours and flavours, which are only available commercially and push up the costs enormously. I would prefer fruit based rather than artificial flavours, so I am using fruit juices obtained from concentrates, reconcentrated by freezing them and draining the juice off the ice. 2. I was using older gelatine, which was not blooming. I had to add a freshly sealed packet to get it to react to turn into a solid. Is the amount of water too much? 3. I used 20gm of solid bloomed gelatine for half the mix. 4. I also preferred the non-icing sugar version as the outside was set hard, but the inside was still soft (due to the gelatine). The poly molds that I use are often too small for the shapes that I want. you really need a one-sided mold, in which too pour the marshmallow mixture, otherwise it is difficult to extract, even using cornflour on all sides and the bottom of the mold.

Instead of using a dehydrator couldn't you do the same as you do with meringues and put them in the oven on very low heat for an extended period of time to dry them out? Maybe the texture won't be as great but surely better than nothing if you don't have one?
