So interesting for so many reasons! Watching you make the candy is hypnotic as always. But the banana facts really stole the show for me this time. I knew about the monoculture problem but did not realize it was related to that artificial banana flavour mystery. Why on earth can't people cultivate different varieties? I think it would be awesome to be able to go to the store and buy different kinds of bananas the way you can with oranges and apples. I'm sure there are reasons but I'd love to know more about them. And the banana peeling thing...my jaw dropped. How did we not know that?

Man this is such a smart way to make a "how its made" food video. Undoubtable you will always have long stretches of footage that take much less time to explain. The way you transitioned between what you were doing and additional info, back to what you were doing, was so seamless and pleasing. Often I start videos like this but x out halfway in. This was too engaging for me to quit, and I didn't even feel dirty afterwards like I normally do from idle clicking. Just a nourishing, well-made video I suppose.

It does.....if you drink Welch's Conord grape juice or eat their Concord grape jelly. Eating grapes are bred to have lower sugar to extend their shelf life..

So there is over 200 species of bananas actually. There is all kinds of colors too Green ones Red ones even. the thing is about the banana we know and love its hard for the American people who all as a culture and together decide what is mainstream to sell in stores to accept new kinds of fruit. Even when the banana was first introduced it was hard for everyone to like them. They had to start selling the banana's at an incredibly low price, lower then the apple which was dominating sells during the time. And the thing is it worked it, when they started selling them so low it actually beat the apple in the market. It was kind of a Hell Mary for the sellers if they were ever going to make it in America. So the thing is about the Panama disease is that it constantly changes and is incredibly infectious. if you even step in infected soil then step in uninfected soil it ruins the whole crop. Also you can never plant that species of banana ever again in that spot. The banana is actually very fascinating even if its not my favorite fruit lol

The problem with the banana is that in America the market *forces* the consumer to have a specific image of what a banana is supposed to be. Then when you tell them that there are tons of varieties, they only want the one that has been brainwashed into their heads. It's the same problem of the Haas avocado. Yet with apples (a local product) you have tons of varieties and they are all accepted. Real bananas usually get speckled when they naturally ripe, but if you show a banana like that to a whiny American they will not eat it because "it is spoiled". They only like those fake, chemically-ripened bananas that are perfectly yellow outside.

SomeoneCommenting Why the latent anti-Americanism? Got a problem with people who don't like bananas? I also don't know what fake, chemically-ripened bananas you're talking about -- every supermarket I've ever been to sells slightly underripe green bananas which are edible, but bitter. They are meant to ripen after you get home. That said, I would love to see more varieties of bananas available.

Its not Anti-Americanism. Its Just Anti-American-Capitalism. which is a pretty extreme version of Capitalism. American food regulations and quality standards are years behind Europe and some of Asia. Which is strange because America is pound for pound more wealthy, but I think the Red Scare is to blame for this and has kind of stopped any social reforms (including public health) for a long time.

Don't they do this? In England we call that a stick of rock. It's sold in seaside towns like Blackpool. A stick of rock is the best.

Found this by complete random accident. It was very insightful and surprisingly relaxing and I soon found myself stuck in a state of nostalgia of my own childhood and how candy played a huge role in my life as a youngster. I also admire the way you cut up the pieces of candy, all by hand, no machines; that's true love and dedication for what you do for a living. If I'm ever in Tallahassee I'll come make a visit.

+gabi braule It's the bananas that are tough enough to ship that are the problems. And the ones that become ripe year round. I have a plant in my yard, but it is delicate. I can eat them ...but they would never survive being shipped.

But with less varieties of kinds of bananas, the more quantities of those there would be. If there were 500,000 bananas left, 50 kinds would make only 10,000 of one kind left, but 5 kinds would make 100,000 of one left. If you have one favorite type, how many sundaes would you want to be able to enjoy?
