Ah Chef Bill, I did not know about blanching. I will try that. I'm not a frequent potato fryer, but when I do, I use just lemon juice to keep them from oxidizing, tumble them in a little potato starch for an extra crisp exterior, and I use rice bran oil because of the high smoke point and lightness. I guess I would do that before blanching...otherwise I would probably break the fries.

Great info! The white vinegar and / or lemon juice will help oxidation. Not sure what the flavor difference might be. Yea, nice thought on the potato starch. Then we get into the whole prepping/battering of fries.

Ok, this story is not totally historically accurate ... :) Most sources say Belgium was the home of 'frieten'. My version was kind of a re-imagining.
