we love our Induction cooktop, 7 zones. so much control, and so easy, and ill have to try the spot seasoning technique. It's easy to find induction cookware, take a fridge magnet with you, if it sticks, its good, also aluminium stuff can be induction ready also.

We've had induction cooktops for several years now and if you're getting a 60cm one (which is what you've got), I highly suggest getting 3 "burners" instead of 4. The ones with 3 usually have one huge burner which is more suitable for large woks and pots. We have never used all 4 burners in ours because they just all won't fit. Another comment is that the induction glass surface will still heat up, not directly from the cooktop, but from your pan. So your cooktop will heat the pan, and then pan will heat up the glass (from having direct contact with it).

Our normal old-school round-bottom steel wok works perfectly well on the induction. It's the same wok we use on fires when camping for the past few decades. We only use metal spoons & tools for safety. We cook Mexican, Asian, Moroccan, pasta, & all sorts of stuff in it. All good:) Cost of stove installation was about the same for us as for Tom a couple of years ago.

For Easy clean up and no scratching the cook top glass, Use a sheet of dry paper towel on the cook top. It won't burn and the cook top stays cooler due to the insulation it provides. I cook popcorn which requires a lot of shacking the 12 inch wide fry pan on top of the paper towel. Works great.

Great way of doing fried rice, I always did rice first then added egg, I can see your method is way better. What I do though is take the overnight rice out the fridge place it in a round mixing bowl and separate the grains by hand, it is way quicker to get rid of clumps. Are these induction cookers always so loud though, I was consider buying a dedicated induction wok cooker but not sure I can handle the sound of the fans, maybe some ear muffs might help. 😁

I think egg first works better and you can always put it to one side so it doesn’t overcook/harden. Another way is to slowly scoop the rice slower into the wok to reduce clumps. The magnet isn’t that loud … my mic is quite sensitive!

Delicious Feed! Thanks Tom for sharing some info and experience with induction. I am more concerned with how these will fit my benchtop. Is the size of the induction cooktops generally bigger than gas ones in which case would be easier to cut the benchtop rather than make the hole smaller.

We did same as you replacing with induction stove and hope the electrician put in 32amp circuit too as kitchen is closer to garage from meter box for a cheaper to connect into for a faster EV charging point..

Induction cookware shopping tip: Carry a small magnet when shopping for induction cookware, if the magnet sticks to the bottom it’s induction ready.

Disappointed this wasn't in your Tesla 😥 but it did look nutritious and delicious! But somewhat appropriate topic for Victorians, given Victoria has banned gas stovetops for new builds 1st Jan 2024. Tom your thoughts on EMF radiation given most induction stovetops exceed safe exposure levels set by (ICNIRP)?

Having investigated claims about this, I can say that there isn't any credible evidence supporting harm from EMF, or induction cooking, (or EVs.) (One of my friends could only afford a cheap block of land under 330kV transmission line & built a house & shed & raised a family there over 30 years & was ok. The electrical & magnetic field around the wires was so powerful, the chicken wire used on their shed to hold the insulation in place gave an electric shock. My Dad, as an electrician had to connect an earth wire to make it safe. That EMF was vastly more powerful than that from a stove which has a highly localised magnetic field. (Compare it with a magnet by using a compass).

I saw this video title and thought WTF? Is this the real Tesla Tom/Ludicrous Feed?? Nice to see something different though and first time I've seen an induction cooktop in use. 2 points, if I may. I would cook my eggs until around 70% done, then tip out into a bowl. Then add my garlic and veggies and whatever, then the rice (break the rice up a bit first before placing in wok would be easier), then add the eggs again and sauces, then top with spring onions.. So you don't find your eggs a bit overcooked when you leave them in there all the way through the process?? Anyways, that's how I do my egg fried rice and of course, there would be many variations.

Could you use a carbon steel wok that has been well seasoned on the induction cooktop? So your the main chef in the house then Tom? Could you put in some chilli and other veggies as well with this? You'll need to train your kids to make this for you and Joyce and so they can do this when Mum & Dad are off at one of the many EV launches. :) You can always have a taste even if the majority is for your kids, as all chefs do.

As long as the carbon steel wok is induction ready then it should be ok plus you get the benefit of wok hei 😁 The benefit of fried rice is you can put whatever you want into it 👍

...I thought that nice authentic wok smokey taste comes from using peanut oil on smoking hot surface though. I have a scanpan wok too but it's an anodised non stick one

“Wok hei” or “breath of the wok” is the art/magic/science of heating a cast-iron wok at high temps that has been seasoned over many years with oil and/or lard. It generally can’t be achieved with a stainless steel or non-stick wok

When induction cooktop surfaces gets hot, it acrually comes from the pan. Cooker heats pan, then hot pan heats the glass.

Add diced silken tofu! And I’d do garlic and onion before the egg…. But hey it’s fried rice it’s meant to be using whatever was left over from last night… there’s no best way, unless you watch a particular Malaysian comedian lol 😂. why such low heat? It's not frying at all...warming up sure, but not frying

You can bring up the temp sure to char some of the rice/protein but then there is a risk the bottom of the pan/wok will burn and make it more difficult to clean afterward. This level is heat is a compromise I have worked out over time to save myself the hassle later of scouring the wok

I thought you were supposed to get a wok as hot as possible like they do in commercial kitchens but on my induction stove with carbon steel wok the inside bottom keeps charing. The oil even caught fire. What gives?

Nice fried rice Uncle Roger has got nothing on you bro. I would use seasoned chicken thighs or even cooked sausage instead of processed meats like ham. I would use Avacado oil since it has the highest cooking oil smoke point. Just saying.
