How to make Fruit Cake #fruitcake #christmascake #christmasrecipe #cake #mpcooks
INGREDIENTS:
FRUIT AND NUTS
1 cup black raisin
1 cup golden raisin
1 cup dried cranberries
1 cup dried apricot
1 cup dried apples
1 1/2 cup glazed fruits
1 cup dried dates
1 tbsp. fresh grated ginger
1/2 cup candied ginger( i just used a tablespoon for video demonstration because some of my family members dont like ginger)
1 cup dark rum
1 1|2 cup nuts(cashew,pecans,almonds, or mixed nuts)
*use any dried and candied fruits you prefer.
*add half cup more of Rum if you want stronger alcohol taste.
*do not add nuts when soaking because the nuts will become soggy.
CAKE BATTER
2 cups All purpose flour
1 tsp. cinnamon powder
1/2 tsp. salt
1/4 tsp. all spice
1/4 tsp. nutmeg
1 tsp. baking powder
1 tbsp. cocoa powder(use 2 tbsp. of mollases if available)
1/2 stick of butter
1 cup dark sugar(light brown will do)
3 large eggs
2 tbsp. dark rum(optional..only if you prefer a stronger alcohol taste)
My fruits are soaked for 7 days and it came out really good and made my fruit cake dense and moist. The alcohol is not overpowering the cake which is what I really like, If you want stronger alcohol taste add more rum when soaking your fruits.
Baking time varies depending on what oven type and size of pans used.
