Amazing recipe. I wonder if it's OK to use maple sugar for the syrup instead of cane.

You can use maple syrup if you're going to serve the salad right away. I'm not sure if it will keep the fruit fresh as long as sugar will. The citrus and sugar syrup is important to keep the fruit fresh for up to a week.

If you want to serve it and eat it right away, then you can add honey, just enough to sweeten the fruit. If your fruit is ripe and very sweet, you don’t even have to add any sugar or honey to sweeten the fruit salad at all if you will serve and eat it all within 1-2 days. However, if you want it to last longer, you need to use the sugar fruit syrup, otherwise your fruit salad will not stay fresh.

You can add the strawberry and kiwi only if you will be serving it within a few hours. The strawberries will wilt pretty quickly.
