Hi Everyone,
Welcome back to my channel!!! and in today's video, I will be showing you how to clean and cook Haitian chicken in sauce aka Poule nan Sos

Ingredients to Clean Whole Chicken:
1 cup of Apple Cider Vinegar
3 limes cut in half
1 cup of sour orange juice
1 tablespoon of salt
Ingredients to season/marinate the Chicken:
1 tbsp of sour orange juice
1 tbsp of sour lemon juice
half tsp of black pepper
1 cup of haitian epis (scallion, garlic cloves and goya salt cubes blended together)
1 hot pepper
1 tbsp of sofrito
1 tsp of tobasco
half tsp of oregano
1 packet of goya bouillon packet
Ingredients to make the sauce for the chicken:
1 tbsp of olive oil
1 tsp of butter
2 tbsp of tomato paste
1 tsp of brown surge
1 whole onion
half of red pepper
half of green peppers
6 cloves
parsley with thyme
Directions:
Step 1
Clean the chicken using the Haitian meat cleaning method with the cleaning ingredients. Clean the chicken with lemon or sour orange juice and vinegar. After about 10 minutes of cleaning and washing the chicken 3 times, remove any traces of fat in the chicken and then pour boiling hot water over the chicken and let it sit for 5 minutes to disinfect the chicken.
Step 2
Create the seasoning with ingredients for marinating the chicken and let it marinate for 30 minutes to an hour for better flavor.
Step 3
In a large saucepan, add the oil and brown sugar to darken the chicken.
Step 4
Add the ingredients for making the sauce for this step
Add a 1 cup of water to the sauce pan and let cook for 30 minutes, after 30 minutes add the tomato paste, onions, and peppers. Make sure to add water to dilute the tomato paste
*MAKE SURE YOU TASTE THE SAUCE TO SEE IF IT NEEDS MORE SALT OR FLAVORING*
Add parsley , thyme , cloves, green peppers and butter
Step 5
Add the onions and stew the chick on medium low heat for 10 minutes.
Step 6
Reduce the heat to low and let it simmer until it is ready to serve.

I paid attention to a few but not all of the Haitian recipes my grandmother made so thank you so much for posting these videos it feels Just Like Home and my family eats how I did Growing Up and now it feels like one of the best homes ever. Thank you for posting our cultural meals💜💜💜 god bless you

Si mwe me w deyo ak manje sa, m'ap pren manje couri. I'm African American but I speak some Creole. Pa mache deyo ak manje sa. M'ap pren li. I love my mother. My mother was a great cook, but I started cooking a lot better after I started hanging out with Caribbean people. Hate to admit this, but I was not taught to clean chicken this way when I was younger. We just washed it off with hot water and done; and we did not use fresh vegetables as seasoning. Just onion powder, garlic powder, paprika and Lawry's Season Salt. My mother used fresh onions, fresh garlic sometimes, but for the most part, we used the powder seasonings, and we did not marinate overnight. God bless my mother. She was really a good cook, but I learned a lot more about properly cleaning and marinating meat when I started hanging out with West Indians.

Yea you can use white sugar and when it’s on high heat it’ll turn brown it’ll give the chicken a nice brown color instead of it looking white and pale lol...yes I have other videos on my channel for diri djon and Haitian bean sauce 😇

It is very necessary to clean your meats prior to cooking it. The impurities in the meat can make you sick or worse. Its very important to clean it and cook it properly. Have you ever heard of salmonella? Do your research. Please clean your chicken before seasoning it and cooking it. Take your time. Good healthy food doesn't cook quick.

Rebecca_is_favored I’ve never cleaned my meat in my life, and salmonella dies at 165°F, just cooking it gets rid of the bacteria, I don’t see how cleaning it would get rid of bacteria inside the chicken.

I expected a white person to comment this about “cleaning the chicken” 😂 Just to be clear, cleaning chicken doesn’t rid it of salmonella which can cause food borne illness. It simply helps remove the membrane from under the skin and any feathers that may still be attached. Always cook chicken to an internal temperature of 165 degrees F to avoid food borne illness.

Okay took me a year, but I finally made this tonight. It was good. However the tomato paste made it bitter. 2 table spoons was too much. I think I’ll do the Jamaican way and use a little ketchup instead. Otherwise it was good.

@@HaitianDiningWithMarie a good supply of fresh water from the tap or faucet in your kitchen sink. I see people all the time getting water from the machines outside of a store. THAT WATER IS NOT CLEAN.
