OMG! I JUST MADE THESE LAST NIGHT. DE-LICIOUS!! It was Sunday and I needed to make something comforting. It was raining, snowing, wind was blowing, leaves were flying. And I made these muffins. And true to her word, Chef AJ came up with a winner. I didn't frost them - you really don't need to. They're amazing as is. My hubby is not plant-based - and he turns his nose up at everything. I sat down and was eating one of these babies, and he's sniffing, saying "what are you eating!" And I asked if he wanted a bite. He took one bite and took my whole muffin. That, to me folks, is testament that they are that good! Holy Cow!

Made these with 1 cup of my own date paste and no frosting. Added walnuts and 1 oz. choc. chips. Dense with no leavening agent but quite satisfying. I'll make these again. I used 1 1/2 cups of oat flour and 1 cup rolled oats. Next time I might add 1 teasp. baking powder.

--To James, Thanks - I wondered what the consistency of the end product would be. I tried the muffin recipe on Nutmeg Notebook's site; I had to throw them out. They were TOO dense. They just became little bricks by the end of the day. My husband said they were like little weapons they were so dry and dense. I really want a recipe that is healthy but also somewhat enjoyable. You think adding the baking powder will help it at all? Let us know if you try it and it works. I like the adding in the walnuts.

I've been making apple butter with baked apples that I uses as date paste for baking. And fig jam both with fruit grown in my connmunity garden. We have grapes too that can be into raisins,

Your muffins look so good! I made your Strawnana muffins awhile ago and now I am obsessed! I eat them for breakfast daily. I like them with blueberries too and I add ground flaxseed for omega 3's and oat bran to my recipe for added fiber. I will try this recipe too! Thanks, Chef AJ!

I've never understood the need for baking powder/soda in muffin recipes. I much prefer a nutrition-packed denser muffin anyway. This is a recipe I'll actually try! How thoughtful to make a recipe completely appliance-free. I, too, prefer to make my own date/fig/prune paste but I've been cooking for years and slowly invested in quality appliances during my journey...

Chef AJ, this will change your life regarding the date paste. Go to a Super King Market, the arabic store, and look near the spices section. They have cheap date paste!!!!!!! Its only 2$ for a decent block of it. I use those for making desserts all the time.

Whatever you use, make sure to taste it. You can't go wrong with cinnamon and a dash of nutmeg. I like to add ginger, too.. trust your palette. 👍

Chef Aj, I have a question. I have noticed that some vegan cookbooks will use bananas in a baking recipe and 1/4 - 1/2 Cup of oil. Since the banana is used for moisturizer why is oil needed? I have also seen oil used in Gauc?!?

I'm not sure why they use oil, but you can always sub applesauce for the oil in baking. Adding into guac is totally unnecessary!

BTW, I have found that very ripe bananas when fully frozen & then thawed at room temperature are very soft and runny and require minimal mashing. They are a great sweetener in baking.

In case you don’t know this all you have to do is add up the total of ingredients and then divided by the number of muffins that it makes and then you have your nutritional information. So each component that goes into it write down the calories for example. Then add them all up and divided by 10, as an example if it had 10 muffins as a result. I bring this up because she already does so much and that’s the least we can do is our own math.
