My husband loves veggie soup! I always make a beef roast (beef roast, beef broth, petite diced tomatoes, onions, potatoes and carrots) the day before I make my soup. I shred the left-over beef into a pot, then just dump all the leftovers in. Two or three cans of mixed veggies, and it's done! I'm a born Yankie, but spent several years in Tennessee ad Georgia.

Great way to make a pot of veggie soup. I was raised on good ole homemade veggie soup with ground beef in it, and cornbread. I make ours today almost like Miss Phyllis does. FunFantastic Facts, I didn't say it was vegetarian, but you can easily adapt it to be. In my part of the South, folks love a meaty flavor to their soup. This is how my Mom made vegetable soup and my family likes it this way. I think it was a way of stretching her food budget.
@clarencegreen30713 жыл бұрын
It's just a matter of what you call it. A bit further north and it's called hamburger soup and made almost exactly the same way. I'm a southerner and proud of it. Had a wife from Philadelphia once, but that's another story.
@cynrok5 жыл бұрын
i'm one of those 'dumb yankees' but my parents are from the south and this is how my mom always made it, except she chopped up a chuck roast to use rather than ground beef. but it was always called vegetable soup even though there's beef in it. i actually just made some for mom last week when she was sick, so the tradition continues...despite my yankeeness...
@sissyjollie5 жыл бұрын

It’s used interchangeably. :) I like to make mine with chicken. This video is the way my mom always made it. She often even adds elbow macaroni which I’m sure will make some of you roll over in your graves even more 😂 , and yes, still calls it vegetable soup lol!

I will then see a bunch in my ceiling meal to freeze and give her a good size container of it as well so she can eat right away. Thank You for the recipe! I run a organization that feeds homeless people and we were looking for a good veggie stew idea that was cheap as we feed 100+ people and are on a tight budget. This looks like the perfect recipe! I like the idea of frozen veggies. I think that if anyone wanted to omit the lean beef and keep it truly veggie and keep a meat aspect, then they could add soyrizo sausage. You are a wonderful cook! I really love your personality, too! Do you think the canned potatoes would work? I am just thinking of how to save prep time on a recipe for 100+ servings.
@sissyjollie8 жыл бұрын
Bless you for taking care of the homeless! If you leave out the meat, add extra potatoes. As for canned potatoes, they will probably work, but try adding them the last 30 minutes maybe less. Over done potatoes will probably fall apart.

Jake, I just remembered seeing someone talk about adding pasta in addition to my ingredients. If you use extra broth or tomatoes, you could add a bit of pasta to stretch it out.
@djm220019818 жыл бұрын
We served it yesterday for Valentine's Day. I tweeked the recipe just a bit. We were aiming for a completely vegetarian dish, so we substituted the chicken stock and used Miso Stock instead. We sautéed all the ingredients in olive oil for flavor before adding them to the pot. Adding more potatoes for meat was a great idea. Instead of tomatos and tomato sauce, we mixed brown gravy in and made it a real thick and rich brown stew, rather than red and we served it poured over Jasmine Rice. I also borrowed your crispy Corn bread recipe, added cheddar cheese and served a slice with each serving. Let me tell you that we never got more smiles and empty bowls than we did with this recipe. I will be watching your KZbin channel more closely for more great ideas for our meals sharing program.

Phyllis, my daughter lives in Fayetteville where she teaches in an elementary school there. I am definitely Southern but have never used hamburger before but I have friends who use it in their soups. Think I’ll give it a try. Just found you on KZbin as I was searching for a recipe. Look forward to watching your videos.

I’ve never made vegetable beef soup with okra. Going to try this! I add a can of navy beans or pintos and diced jalapeños for a southwestern soup. TY!

Dee Dee Moore & Co. soup is so versatile. As long as you put in the veggies that you like, it will be great!🥄🍵

So glad you liked it! I would assume you have some veggies that are different than what we find in NC! Be sure to try the cornbread with it!

Up North we call this hamburger soup, minus the okra of course. I love the lima beans in it and I also add cabbage. That's the best part about soup, we each make it our own and how our families like it. It looks like a pot of vegetable goodness.

Debbra Rose I love sharing my love of cooking! I add cabbage if I have it on hand, but I don’t usually have it.

Helen Vance Vance I don’t think I’ve ever tried Triscuits with it, but I almost always have some in the cabinet. I’ll give them a try!

Looks delicious! Making some for supper tonight. BTW I'm from NC as well. We Southerners know how to cook huh? Thanks for the video!

We definitely do! Glad you enjoyed the video!

Great video. Just one thing that I prefer to do is wait for the frozen food to come back to room temperature, drain out the moisture from the thawing. When you add cold stuff to a boiling pot like this, it takes longer to cook since it brings down the temperature of the pot by a huge amount... other than that I love these recipes.

Hi everyone, my Mom, didn’t put ground meat, she used beef roast , but almost the same, no okra though!! Looks delicious!! Yummmmm❤️❤️😘😘😘

Debbie, thanks for sharing that. I sometimes use leftover roast or even some beef stew meat. When I’m sharing a recipe, I like to use ingredients that are easily available to all and not too expensive!

This is very close to how I make mine too. We have always called it hamburger soup. When I make a batch it’s a huge huge batch so that I can freeze some as well, and boy does it freeze well 😁. I also add a bit of water to my tomato cans and tomato sauce cans. We paid for all of the bits in that can lol. Thank you🦋💜

Tammy Hanson you are so welcome! It is funny how we all have different names for the same soup! 🍵

We had almost this soup tonight. I’m from Arkansas, and my husband is from Idaho, and he wouldn’t consider me adding lima beans or okra to the soup. Ours was delicious-but I sure missed those lima beans and okra!
