I'm retired ,I never learned to cook , just to busy with academic and sports . Then a full time job for 45 years .I'd would tell everyone " when I retired I'm going to learn to cook " Wow , I've spent years watching videos concerning cooking , recipes , technique. Wrote down recipes bought cookbooks, talk to friends asked questions , I've failed everytime. Then (like an answered prayers ) I found you ... Thank you , thank you , thank you ! I now used this recipe but substituted 3 beef shanks. I seared them, like you do in the "Caldo de Res!", before putting them to boil. After 1 hour I took out the meat, scooped out the marrow, and broke the meat into bite size pieces before putting it back in the pot. I added the mashed up marrow to the matzo ball dough (I did not use flour like Mama used to, but used matzo meal) and dropped the matzos into the simmering soup, and covered tightly for 20 minutes. After 20 minutes I took out the matzos (so they would not break up) and put in the vegetables. When the vegetables were almost done, I put the matzos back in. I did not use tomato because I did not want to color the matzos. I am so proud that I made a soup similar to Mama's that tastes really good, thanks to you!

This is my favorite type of soup,I like my soups to have lots of stuff in them,when I do beef soup I add barley with the vegetables in mine,as barley is one of my favorite soup ingredients, I also love mushroom barley soup.Thanks Rachel for all the great recipes.

The large pot of vegetable beef soup is great for putting in freezer bags after it cools and saving them for another meal. I would reheat it for lunch or dinner and serve it with a grilled cheese sandwich. Thank you for sharing your recipes with us!

My grandfather was a cook in the Army during WW2 and he would always make soups for our families and tell stories about cooking in the Army when he was in the kitchen. This looks very similar to his vegetable beef, I've been missing it since he passed 25 years ago. It's been cold and rainy the last week so I'm going to give it a whirl, maybe my kids will like it as much as I did.

Made almost exactly that soup. Instead of tomato paste I had some left over fresh tomatoes and I used beef broth and some homemade frozen left over chicken broth. I used a package of frozen mixed veggies and a lot of sautéed mushrooms left over from another meal. I used some barley which thickened the soup instead of flour. So good! It was raining here and vegetable barley beef soup was filling and comforting. Besides, all my left over veggies, mushrooms three small potatoes and fresh tomatoes went into it. Mom called this garbage soup because it rescued left over vegetables from the prior week's shopping from the garbage. Cabbage and even romaine lettuce, can go in the soup too. Even chunks of butternut squash can go into a hearty soup. Next week I have turkey wings for vegetable turkey noodle soup. Maybe I will throw in a smokey sausage or two for flavor in the turkey soup. It's winter and hearty soups make me happy.

My mother’s recipe is similar except in the south we add okra and she added half a can of creamed corn. Yes, half a can adds sweetness and you add it last or it sinks to the bottom of the pot and can burn. The other half a can of creamed corn goes into the corn bread she always served with it.

Beef sears better in a regular, well seasoned, cast iron skillet then transferred to the enameled dutch oven. Excellent recipe. Will definitely cook this after I’ve used more of my planned ahead stuff in the little fridge freezer. Many thanks for taking the time to make this video.

Am assuming your relaxing time is very short and precious due to your intensive video, prepping, cooking and planning due to the heavy production load. Looking at this great recipe, am thinking it might work to halve all the quantities of ingredients and use cooked boneless skinless chicken thighs instead with the vegetables and those thin, 1 inch square rolled dumplings with 3 or 4 LONO-LIFE Chicken Broth stick packets. Late this morning, made my first ever Navajo (7 inch) Fry Bread (only 3) for a 1 egg 3 layer rolled omelet, a 1/4 cup of your Perfect 5 star Chili I made for the 1st time last Friday for a scrumptious breakfast taco. Best chili ever. ❤

my wife also makes the sort of thick flat bread. she uses white wings tortilla flour, makes the dough, but instead of making it flat she makes it sorta like a pizza crust. it's soft on the inside.. put butter on top. great for dipping in soups and stews.

@@gailwapiennik2226 I add barley when the beef is fork tender and the vegetables are almost done, approximately 30 minutes before the soup is finished. Don’t add more than a cup (or less) as the barley will absorb the broth. I use pearl barley and you’ll know it’s cooked when the barley splits. It should have a tender chew.
